Picked up 3 more Choice briskets today at Wal-Mart. They were $1.58 a pound.
All three are already on the pit. Sending two briskets back to Dallas with the wife for a co-workers 50th birthday party next weekend. I'll slice them and vac-seal them prior to sending to Dallas.

Glad to hear that you scliced them ahead of time. Once I did two briskets for a friend's party. I sent them to his house with a friend. When I arrived a few minuets later I went into the kitchen to sclice them up. I found that someone had ruined them by sclicing them in all different directions.

I tried 2 briskets from Wal-Mart and they were great.I asked for the 8 to 10 lb range and the lady went back and opened a case and let me pick from it.I thought that was nice.

Never dreamed I see the day folks is touting the virtues of 1.58 per lb. packers. I start buying when they work themselves down to .99. Ya know sometimes you can grind a brisket into hamburger cheaper than you can buy hamburger meat. I done that several times. Now it has great flavor but dont hang together very well. Pulls the same trick if you make sausage out of it. It is sadly lacking in myosin or some other. I would mix an egg with it probably..for making hamburgers that is. I druther have a Select IBP than a choice Excell any old day. Now was them Excell briskets by any chance? If not...I will take all this back of course:) I have seen a few decent briskets at Wally World. Not often mind ya.

Wow, I have a lot to learn, because I have no clue what that means.

IBP and Excel are the beef packing companies. Select and Choice are the grades of beef. Select is a lower grade beef than Choice. So he is saying the lesser grade beef from IBP is better than the better grade beef from Excel.

Your 3 main beef grades are Select, Choice, Prime, in that order.

That's good to know. I'll try that next time HEB has them on sale.
