Need some ideas for Kingfish.
Welcome sparks! 8) Google is yer friend! :wink: I've found several good recipies for king fish there. I haven't tried em all but I did some not long ago on the Weber Kettle that turned out really good. Rinsed steaks well and pat dry. Lightly brush all sides with olive oil and lemon juice for a spice binder. Spices are only limited by yer own imagination. I cooked quick on a fairly hot grill searing both sides till the steaks just started to flake with a fork. Be careful not to over cook...maybe 2.5 mins per side depending on how thick yer steaks are. Serve em hot, bro. Good luck! :wink:

I like cooks.com for base recipes, then adapt them to the grill or smoker. Another good place is foodnetwork.com, do a recipe search.
Well tells me Mr Kingfish. What do they call a Mexican woman with no legs.............. :wink:

Hey Sparks. Nothing like straight answers, huh? (And these are nothing like straight answers.)
If you're asking about smoking the mackerel, that's usually done at something like 150F (and that's called "hot smoking" for fish, cold smoking is at 85F or less). Cook to an internal temp of 140 or until flaky and cooked through. Preparation usually calls for brines and drying.

The recipes are for salmon, but smoked mackerel is very popular as well.
Ohhhhh! Fish type kingfish. I thought this was a trivia quiz. :oops:

A nieghbor went deep sea fishing and has 2 whole filets. We will be making steaks out of them and grilling them. I only have a WSM right now so smoking is out this time.
Hey TB, I wouldn't expect anything less from these guys. I have read a lot of useful info from this board. I get a good laugh from some of these post on here.

I like to brush them with a little oil, sprinkle with a little salt and pepper, and grill over a hot fire. Do it quickly, like M38 said. That works just fine for me.

Fishes have different names in different places, but King Mackerel down heah are called King Fish. There's also a Spanish Mackerel, so King refers to the largest of the species.

i like to prepare king fish fried in a real good beer batter fry them up just right pop em in your mouth suck all the batter off then spit out the meat

Try 1 part soy to one part pineapple juice and put in fridge overnight. Then dry season right before you put on the grill with whatever floats your boat. I have caught and released kings for years until I was turned onto this. ENJOY

My dad live in Pensacola and catches quite a few kings and spanish in the gulf near Pensacola. I know this will sound strange but he BBQs them. Grill them up, shread the meat and mix with BBQ sauce. Very Tasty!
