I finally got my home computer working, so I can post some BBQ pics from last Sunday. I only have photos of the finished product :oops:...my wife who has declared herself as my "official photographer" didn't show up until everything was ready. :shock:

The first few are of my first attempts at armadillo eggs, the next is of a couple of slabs of ribs (the one on the left has the Pineapple Hab on it) then a couple of chuck roasts, some chicken, some marinated shrimp and the last is of a pot of white beans (not traditional BBQ food...I just like them). As stated before, the TXBBQ Rub and TPJ were great.

Oh, the first is of our cat...I only left that in because his name is "Gator". 8)

WOW !!! Everything looks soooooooo good. THe Armadillo eggs look so THREATENING in the 1st pix... :shock: 8) and they are just perfect when 'hatched'...ribs are good. The roasts look fabulous, and there ain't nothing wrong with those shrimpies...except their location.

Listen, if you're gonna pull a stunt like this again in the near future, please invite me and a couple of stand-by taste testers. :wink: :wink:

Really, that chow looks GOOD. I bet it tasted just as good!!!

Zee...nothing on the roast except Worstershire and Brisket Blend :D

75fordfan...the filling was just "sharp cheddar".

DB...I'm always suprised at the number of taste testers that show up when there's smoke in the air :shock: but there's always room for more. Consider yourself invited.

Good work, look's like you can mark this meal down as a success. The ribs looked very good.
And I like your cat, did the cat get any leftovers? My cat always gets some leftovers and then goes outside until I know she has digested, the rub seems to give her gas.

I got the recipe for the Armadillo Eggs from this forum. If you do a search, you'll find discussions on how to make them, as well as for different variations to the recipe.

The ones in the picture were made as follows:

Jalapeno peppers with the tops cut off, then cored and seeded, stuffed tightly with sharp cheddar cheese, wrapped with fresh pork and green onion sausage and then dusted with TXBBQ Rub. They were then cooked on the smoker for around 1-1/2 hours, until done. I let cool for just a bit, before slicing, to let the cheese stiffen up.
