Ya"ll I felt so bad about scorching the hell outta them ribs 2 weeks ago that I decided to toss a brisket on the pit tomorrow. If I can score my friend's camera, I will try to post some pics for ya"ll. Here's hoping
that I don't scorch that brisket. Wish me luck. :P :wink:

Hey It's 3:00 P/M right now & all is well so far. I just put a drunken chicken on the pit. I am gonna try to get some pics up before too long.BTW, the brisket is looking real good @ this point.BTW I appreciate the vote of confidence ya"ll. :)

Damn ya"ll I don't know which went faster, the burnt ribs or that brisket. :?: These coon asses don't play when it comes to suppertime & lunch the next day too. :P :lol:Now I am finally starting to feel some redemption,,,,,,,,,,,,,,finally.BTW a BBQ in La ain't complete w/out a Brew & somehting from LSU.Read it & weep Texana. :P :lol:

Very nice Paul,looks perfectly cooked n tender, just rip off a hunk and eat, save the knife edge..
Paul a good tip for not overcooking ribs is to not post photos of overcooked ribs,like my chicken fires,i never postem so i'll never admit to it. :wink: :D

Hey Mich, on the pic posting, I did remember most of what you taught me. I still had to phone up Zilla & get some coaching to help finish it off. I am still a working progress. Just be patient with me if you will & I will have this thing down pat :)
BTW, Hey PGA PRO, there was about-6 of us on that brisket. Believe me these coon asses can pack away some groceries in a hurry.PPL around here acted like they ain't never had brisket before. :lol: That's about what happened to my brisket. Hey, a good BBQ restaurant down here just might go over good. That along with a AYCE Catfish menu. It's an idea.I am glad that ya"ll liked the pics. Thanks again ya"ll.

Excellent job Paul, love that brisket. Looked like it had a good smoke ring and juicy. My only question though, was the Bud real cold or just from the fridge? You are redeemed.

Hey Brent on that knife, it is a Forschner 14" with a Grontan edge that works like a champ. I sometimes use a Showtime knife for my briskets that works with the best of them.BTW that was a 13# brisket. I hate cooking small briskets.
Hey Ridgeback, sorry brother I am definitely a LSU fan, win, lose, or draw. Now I have nothing againts the Ga. Bulldogs as I lived in Dahlonega for 5 years,but ,my hearts with the Purple & Gold. Texana can tell you about this. Hey it's all good. :D
