I like to stuff them since they don't really have a great deal of meat. Here is a search from foodnetwork.com that I have used in the past...

ALSO... I have made quail like ABTs/armadillo eggs as well. Stuff the whole jalapeno (after cleaning out seeds and membrane), with cream cheese and little smokie. Form Breakfast sausage (I use Owen's) around stuffed jalapeno. Place "Armadillo Egg" inside whole quail (Stuff in Quail). Wrap quail with bacon and secure with tooth pick. Role or sprinkle generously bacon wrapped quail in TXBBQRub... or season rub if order is not in yet! :lol: . Place quails in foil pan and smoke in smoker for about a hour or so sometimes less, don't over cook the bird, ... rule of thumb "till bacon is cooked to crispy". That is my way of doing Quail on the pit.

My wife loves it, and she doesn't eat game that much. The first time, I told her is was just some really small cornish hens. ;)

If it's not too late I got this one from TXPGAPRO and it is KILLER I highly recomend :D

I have had them marinated in teriyaki sauce.
