Hello Everyone
Just finished up 2 brisket one small 7lber and one 10lber. I really surprised me how quickly they were done. I cooked them at 240 then foiled at 165 with a cup of beef broth. The 7 finshed in 6hrs and the 10 took 7 1/2
I've never seen such a fast cook. They both came out great.
There was a post on another forum discussing sealevel affecting cooks. I'm only about 20miles from the coast and I'm beginning to think there must be something to this. I've never had a cook go over 14hrs or am i just lucky??hope everyones having a great weekend

I am about 30 ft above sea level myself. Sometimes they just cook faster. I just pulled off an 11.5lb brisket and it took just a little over 12. I probably averaged 225 or so.

Welcome to the world of competition brisket cooking with sleep included, not all teams do it like that, but works for me and others.... :D ....Now if your cooking KCBS cookoffs... things change, like their early turn-in times,
you might need to start the pit in the middle of the night...

Hey swamp, we cook our briskets on the avg. of about 8hs. 4hrs uncovered at 225 to 250F, the we wrap in foil with a mop sauce and cook at 250F until you can push your finger into the meat. We try to get them between 10 and 12 lbs, pre trimmed. We are about 30ft above sea level. Brisket tenderness is really hard to determine, it may be done in 6 to 7 hrs, but getting the tenderness right is tricky. sometimes two identicle cuts might take as much as 2 to 3 hours diff. cooking times. Calm cows or stressed cows? Who knows. Glad they turned out great.

Momma came home from work last night and tried some and her eyes rolled back in her head and she said thats what i needed :shock: .I was feeling a little left out at this point :cry: but all turned out well for everyone :wink:

doesn't sound too unusual to me. i cooked five last week-end that were all around 10 lbs. and they were finished in around 10 hours.

Wanna do it quicker? Weed burner will have it done in 5 minutes or nuke it on high.

I don't know if sea level matters or not, but I think humidity does. On average, a 12lb brisket takes about 16 hours to cook at 225 for me here in Ohio. However, when I cooked a 12lb brisket in Georgia it only took 12 hours.

Mike, the difference is proportinal to the distance away from JShively, and that weed burner of his. Just hate to see what he could do with a chicken. He'd probably cook the inside first, then just a quick crisping of the skin. I'm sure he has a 101 uses and recipes for that thing. Woodweedburner, did you get him "started" on that thing?
Mike ,where you cooking on your Stumps both times, or different equipment?

I may be the wrong person to comment on this because I have only competed twice but I have never had one on longer than 8 hours. I try and cook at 225 though.
