The time has come for the inaugural cook for the “Q”-nivore. Weather is looking a bit threatening and we are expecting thunder and lightning throughout the day.

Pit got fired up at 10am. 8 lbs of Royal Oak Lump and a couple of Oak logs. Let her go for 2 hours to get the pit to temp.

Prepped 2 Costco monster racks of spares. 5.25 lbs each. They got a treatment of Woster sauce and a generous coat of Rub modified from Smoke and Spice (K.C. Sloppy Ribs recipe)

Prepped a fatty the same and some chicken thighs as well.

Got a tray of ‘maters, poblanos, Anaheim’s, japs and vidalias in for some salsa as well.

Oh…did I mention some ABTS as well!

Might do some beans and gotta brew up some sauce while this all cooks. :D

I had my first ABT during the last Q-Fest. They were delicious. I hope we can do a ton of those at Q-Fest III. I believe Carnivore provided those great eats.

Letting the smoke do it's magic.

Weather is holding and the pit is maintaining temp well.

Gotta love 3/8" thick plate!

Glad to see your exemption is working and there might be rain in the near future for the 'first cook'...

MKD...looks terrific...I gotta ask what did you sprinkle on top of the ABT's after they were bacon wrapped? It looks like it could be rub, but it just gave me an idea for making ABT's with a Pig-Stick-Bacon twist to it...

Just hit them with whatever you are using for a rub on everything else. The brown sugar in the rub mixes with the bacon fat and .......DAMNIT...HONGRY AGAIN!

Do you hang out at the local school passing out your "stuff" to the unsuspecting kids? Do you ask them to take some to the parents "just to try"? :?

If this is the ONLY kind of smoking we have to worry about the kids getting into we can all rest a bit easier!

Besides if we et mom and dad hooked then there is more catering work for all of us :shock:
