View Full Version : Resting a brisket ?

I cooked the brisket to 165, and then I wrapped it in foil? It is getting close to 200, when I pull it, do you rest it in or out of the foil. And I need to rest it for at least 45-60 minutes if my memory serves my correct. Any other resting tips would be gladly accepted.

Usually best if kept covered while resting it, either wrapped in foil or in a pan covered with foil or lid, save the juices, degrease it and use over the sliced brisket or save for future use....beans, sauces, use on next brisket to juice when foiling at 160 or so....etc.....like Woodrow sez.....ya got it covered..... :wink:
Ditto! I usually let mine rest 2 hours but one hour at least should do. Keep us posted on the outcome...pics are always welcome! :wink:

Well, that was at 4:30 and here we are 4.5 hours later so I can only assume you've rested it properly and eaten the whole thing. :D
I'll rest mine at least an hour in the foil with all it's original juices once I hit 197*F. Leftover brisket and juice stock go into separate FoodSaver bags for later 'plan-aheads'.

Well I rested it covered for 1 hour, in the foil. Then I sliced it and let it sit in it’s own juice for about 15 minutes. This was my first brisket everyone loved it; I thought it was a little dry but was very tender. I cooked to 165 then foiled it, but I didn’t add any liquid t it when I foiled it. I also use a red chili power powder rub. I think next time I will cut back on the red chili it seemed to be a little over powering. I did order some of the Texas Rub I will use that next time also. All in all went very well. There were no left overs and everybody wanted more.

Thats good advice, it has worked VERY well for me. It is very good. Go ahead and pick you up some Texas Pepper Jelly too.

I'm glad it came out well. If everyone loved it that is what counts.
