Hi all I need a good pork/beef hash recipe if anyone would like to share please, I love the hash @ my favorite BBQ joint but they wont share, 'magine that huh'. So, if any of you would be kind enuf to share with me I would apprieciate it, Thank you. BTW, this is the only place I could find sort of proper to ask for this because for some strange reason the moderator doesnt seem to think the recipe section is the proper place to request recipes..... :? ??? Strange to me, but to others may be ok..
Hey Gourmet
Now, folks in Georgia and South Carolina eat BBQ Hash, but not many others and not in many other places. At a Q joint, you're like talikng about BBQ Hash, but there's lots of other hashes (roast beef hash, corned beef hash, or a similar dish, Brunswick Stew).
The only recipe I have came from Captain Morgan who only posts occassionally here, but I'm sure he won't mind. I'll follow with my own Brunswick Stew recipe.
Captain's South Carolina BBQ Hash
2 pounds of shredded or chopped pork butt bbq
2 pounds of chicken meat, shredded or chopped, any type
2 pounds of onions
1 28 oz can of tomatos
5 white potatos, peeled and diced into chunks
3 tbsp salt
3 tbsp black pepper, freshly ground
1 tbsp garlic powder
1/4 cup Worcestershire sauce
1/8 cup cider vinegar
Brunswick Stew
2 Tbsp Veg. Oil
1 onion finely chopped
2 cloves garlic, crushed and chopped
2 lbs pork (ground or chopped fine and smoked if you got it)
1 lb chicken (ground or cooked and chopped fine)
12 oz can of finely diced tomatoes
2 15 oz cans of cream corn
1 15 oz can tomato sauce
1 15 oz can of water
1/8 cup mustard
1/4 cup BQ sauce
1/4 cup Worcestershire sauce
salt, fresh ground pepper and Tabasco to taste
dried potato flakes
Cook onion and garlic in oil until clear. Add meat and brown or heat if already cooked. Drain and add all other ingredients except potato flakes. Cook for 30 minutes over low heat, stirring often. Add potato flakes to thicken to desired consistency.
Can I ask where your favorite BBQ joint is? I'm a guessing it's in Augusta.

My favorite Q joint is in Martinez, the town between Evans and Augusta. Its called Mots BBQ. I love their hash most of all but MY Q is better of course.... :D Thank you for your recipies, I will try both as I am a big fan of Brunswick Stew also, my neighbor Bill makes a DAMN good B stew!

those look good TB
Thanks, but I've never had hash. I think the probability of your partaking of BBQ Hash increases proportionally the closer you get to South Carolina.

I will. I'll give it a try. I have heard good things about hash and even read a history of it recently. I wouldn't knock it until I've tried it.
Favorite Que joint? Nothing really comes to mind. I like what I had at Easter at the Whole Hog Cafe in Little Rock. I had good BBQ in Texas years ago and I want to spend a few days in Memphis - haven't done that yet. You can get excellent Brunswick stew here in town, but the BBQ pulls a vacuum.

Well TB, Mots is my favorite hometown q joint, I have had better in North and South Carolina as well as Southern Georgia and Florida. Texas has good Q too but in my opinion they use too much mesquite and it left a bad smokey taste in my mouth, Now Louisiana has some of the best BBQ in the world we go every year just to eat, Arkansas had good Q but my favorite all time best place was probably in Poland , a small western town named Poznan about 80 miles from germany. Now these people have smoking food down to an art. Fresh smoked kielbasa or pork...goodness...THE BEST! My wife and I spent some time in England with friends who live in Portsmouth and have eaten smoked foods there too, being a seaside town lots of smoked fish , and I love fish but Poland has them beat. We are going on a trip to Las Vegas in August if you have any recomendations we will check them out. Thank you. Henry
Boy Henry, you git around. I do like polish sausage, yes I do.
