View Full Version : Super Trim Briskets

So I ordered a few choice packers at HEB the other week. They call yesterday and say there in so come and get them. Ended up they ordered a case of Choice Angus Super Trim Briskets. This is a packer with almost all the fat removed and a 2lb piece of the point left. The fat cap on the bottom was about 1/4".

I could have refused them but I took a 5 lb and a 5.75 lb one. Rubded them down last night with Woost and rub and wraped in saran over night. I put them in the pit at noon 250 degs and at 165 I foiled them and at 200 deg I put them in the cooler for 2 hrs.

Best brisket I have made yet. Wife has the camera in Kansas so I can't take pics. I think choice is the way to go. The flat was very nicely marbled. Gonna try a full packer when I can get it.

Sounds good zilla. I also really like choice too. I have only done brisket a few time and I have found that the choice ones come out better than the select.

I usally do the IBP select briskets from Sam's. They always come out good. Sometimes little on the dry side but tender and tasty. I got some IBP choice briskets at the local Kroger's Memorial weekend and cooked a couple the same way I do the selects. There was a huge differance in taste and moistue :D Needless to say, next time I find choice briskets on sale I will be stocking up :D

I found a custom meat seller in Waco that will sell Choice trimmed brisket at $1.58/lbs if y ou order 6 (case) at a time. I think that is a good deal! Also tri-tips for $2.29/lbs.. I think that could be even a better deal.

I'm glad to hear you finally found a brisket that you liked, Zilla! :)

That is a good, deal, PGA. I wouldn't mind finding something like that around here.

Maybe wortha cold beer at Hooters in selma?

I got them at the 1604-KittyHawk HEB in Universal City. You should give them a call and see if they still have them. Let me know, a beer at Hooters sounds good. I'm headed to Rockport at 6:00am so we might have to wait a bit. We ought to get together anyway. Lets get a hold of Kpigout too.

That is a good deal! Especially on them tri tips :D And considering packer selects are $1.32 at Sam's here the briskets sound good too. Do you jsut ahve to take whatever sizes they give you in the case or can you get them fairly close in wieght?

I have never cooked anything but choice briskets! I just tried to order a prime one for a comp next week and my butcher said I was nuts! I have always thought that too. If you cook something for 10-15 hours, it will be tender. I relented and went back to choice!

The briskets are 10-13 pounders. Want to split a case? The tri-tips are packed 25 pounds to the vac pac.

Thanks Mike but I'll have to pass right now :( Have my freezers full and no extra space. Guess that means I need to do some more cookin' :D I'll keep it in mind though and maybe in the near future.
