View Full Version : any advice on beef livers

will be doing a brisket and several slabs of pork spares this Saturday with guys i work with for a B-day [for one of them].

there has been a few requests from a couple of older guys, they've enjoyed my Q in the past.

they say they enjoy spicy foods the most.

they wanted to know if i could smoke and grill a couple of ribeyes and some slices of beef livers, marinated in fajita mix or southwest mix, to go along with a few ribs and bites of brisket on their plates.

i've never had beef livers treated to a fajita or southwest mix and Q'd, but i have to admit, it might be good.

otherwise, i wouldn't be interested in beef livers.

Does anybody have any recommendations on how to go about this?

This would only be a small amount, because everybody else and the kids are going to stick to bbq ribs.

I'm a fan of calf's liver and onions. I have never Q'd it, but if I did, I'd cook it lightly as it's a tender cut. I have never eated beef liver, but most of the recipes call for cooking it longer than calf's liver.

as far as the livers go, thats what they were talking bout - calf livers

i guess i'll have to be careful with them since there tender and not forgiving like a steak somewhat.

would you dip them in wooster sauce or olive oil, and then rub them with the southwest of fajita mix - to get started?

Man, I don't know how I would go about cooking liver on my pit, but I'm eager to hear how you do it. I might have to think about that and experiment some, too. Smoked liver sounds pretty interesting.

Never smoked liver....don't eat it....unless....I was real drunk and really, really hungry, or the other way around...

What da heck is a calf :? I'm thinkin it mite be beef :? Tee cooks calf liver a lot, fried in pan, coated in flour. She says its got to be fresh to be best. Don't really matta to me. I cover it with about 4 pounds of sawtaed onyons anyway.

I was thinking about those chopped liver recipes that were floating around a little while ago. I wonder how that would turn out . . . .

yuck. I have heard that people who actually like liver need the iron it contains. I wonder if there is any truth to that?

That might be true of someone that craves it, but I don't know about someone that just likes it.

:D I used to eat it until I went into the army and they cooked it green and it tasted like crap. I just use it now for catfish bait. Heck fried catfish, blackend catfish is better that liver any day. :D

zYa know, there are young coon*****es and then there's old, dried-up, tough coon*****es. They're both coon*****es, but different. Ya know? :lol:

i agree with most everyone here

if they bring it with the mix,i'll fix it up, i'll throw it on the smoker beside a couple of ribeyes

hell - it wouldn't matter to me if they brought rattlesnake, alligator or emu

i'll give it a shot - and try a bite -they can have the rest

Don't know about smoking it but growing up my Mama would pan fry it and make me eat it :evil: I hated it!

We still eat most Sunday dinners at my Mama's house and now that I'm much, much older, on the rare occasion that she cooks it, nobody's going to make me eat liver. Problem is...I kinda like it now :oops:

I'm the only one...everyone else in the family looks at me like I'm crazy :shock:

I suffer from gout so I have a great reason not to eat liver besides that it tastes gross.
