View Full Version : Butts are on-Dial-up warning--Pics-update

Bougnt a case of butts at Sam's yesterday froze all but 2. They were about 6 1/2 pounds each. I thought I would try cooking them at higher temps. rubbed with TexasBBQ rub and let them sit wrapped in the frig til this morning. Fired up the smoker about 7:30 this morning-at 8:30 its temp was 250--so I put the butts in. at 9:00 it was cruising at 310--spiked once for about 15 min to 340 then settled at 320. at 10:30 the internal temp of the butts was at 162 & 165. So I pulled and wrapped in foil and put them back in. at 12:10 they were at 197 & 194. pulled them and wrapped in towels and in the ice chest for a rest. I'm not real sure of this high temp high speed cooking-although being able to do pork butts in that short of time could come in handi sometimes. I will post some pics later and let you know how they taste.

I have to admit -I couldn't tell or taste the difference doing them this way :shock: The meat was very juicy and tender
Will I do them this way all the time-who knows, but it is nice to know I can if I need to. This way was maybe easier for me with the type of smoker I have(Spicewine) than it would be with a big offset. easier to get to high heat and maintain. Took less than 5 pounds of lump. I can't imagine the fire you would have to have in a big offset or amount of wood :shock:

OSD those butts look great. A pork butt is so forgiving that I think you can cook it very hot and get it done pretty quick. I just do not think brisket cooked hot and fast is the way to break down all of its collegen and make it tender and juicy.

I dont think I have ever had pork butt that I can remember. Thats a shoulder right?

Shoot. Those look pretty good to me! I think I might try some hot and fat butts this weekend.

Of course, my wife will kill me if she finds out. :twisted: 8)

I has YET to cook a butt. Don't know why either. I guess I really don't know what to do with it once it's done....... Any ideas?

OSD- However you finally prepare it, they sure do look good.

Hot and fast is the way I've been doing mine recently due to time constraints in an upcoming comp. I inject the heck out of 'em and try my best to keep the temp over 300. This was part of a 5 lb'er that cooked in less than 6 hrs. I foiled from 160 to 205 but next time I think I want to get a little more color and smoke before foiling. The flavor was great! I finished it with a modified Lexington style sauce.

Yo OSD...those butts look real good !!! Hotter is good with cooking butts, as Bill said. They are very forgiving. And they almost always seem to pull with ease..pork butts are the training wheels for BBQ...

You can serve it like any other bbq'd meat with sides and such or serve it in nice sandwich buns with your choice of sauce or sauces, a dash of hot sauce and cole slaw on top.

Take your plan-aheads to work with some buns. I brought some in yesterday smothered with TPJ Peach Grilling Sauce and there were smiles everywhere. Some of us have to work on Monday, so I'm going to bring in some more. The butts are cheap and easy and will put a smile on peoples faces. What more can you ask for when cooking bbq? 8)
