Here I am at 1:48am, cooking low and slow. Big family reunion tomorrow and I thought I would cook a variety of meat. Trying something new for me. Rubbed everthing but the chicken with mustard before putting on the rub. Interested to see how this works. Used Texas BBQrub on everything but chicken. Just used an old standby rub on it. Plan on fixing some of, I think Bill's, potatoe receipe. Sounds great. Well better check the fire. Let you know how it turns out.

Summersville is pretty close the geographic middle of the state at the start of the mountains. We are at about 2700' altitude. Made it a little tough to hold temp. with the heavey due and 50 degree temps. Foiled the briskett and butt. Working on ribs and chicken. We are hear all the jokes. We give Jeff Foxworth a lot of good material.

:idea: If you have not tried Bills Rub on Chicken - I think it works as well on chicken as any of the meat's - my people love his *recipie.
(the only dif. I take is too marinate my chicken in IDressing for 2 hrs before the pit
*BILL'S EASY CHICKEN
One of the other staples for family gatherings and grilling is the chicken. This easy to prepare chicken has a great taste and color and is a favorite around the old grill.
What you need.
1-Whole chicken (usually cut mine in halves)
or as an alternative you can use chicken breasts
¼ cup of TEXAS BBQ RUB
¼ cup of Italian dressing (any brand will do)
Take your chicken and put it in a glass baking dish. TIP: Squirt the chicken with some Italian dressing. Make sure you cover the whole bird. Next, sprinkle the chicken with TEXAS BBQ RUB. Cover both sides of the chicken lightly with the rub. The chicken is now ready for the cooker.
Place the chicken in your cooker. You need to use the indirect method of cooking and make sure you add smoking wood to the fire. Place the chicken with the outside of the chicken facing up, skin on side up. If you are using chicken breasts place the breasts with the flat side down on the grill. Cook at a low temperature until the chicken is done. Examples of cooking times for whole chickens are as follows: (chicken breasts will cook faster)
180 degrees - about 3 to 3 ½ hours
200 degrees - about 2 ½ to 3 hours
225 degrees - about 2 hours
That is it. These chickens turn out to be moist and have a great taste.

I grew up in Ivydale, WV. Graduated from Clay County High School. My Dad and I used to Crappie fish Summersville all the time!
Good luck on the BBQ/Family reunion. Remember "It's all relative in West Virginia" :lol: .

ain't that the truth :!: :!: it's also pretty interesting to see what goes on in your neighborhood at 3:00 or 4:00 in the morning :shock: :lol: :lol:

I know what you mean about dry heat! I now live in Tipton, OK. The AF has me stationed at Altus AFB. I lived in San Antonio (Lackland AFB) for 10 years.

jhendri, I work with a bunch of fellows from Clay County, Jeff Nutter, Jimmy Clark, Joey Coleman, John Osborne. My pretcher Bill Bennett is from Clay. Your so right about the private time. Good time to pray. Well the food was great. I had to hold the meat a little long on the grill waiting for everyone to get there. Over cooked the ribs and briskett. It was still outstanding. Bill's surprise potatoes was a great hit. All gone. Unfortuantely back to work tomorrow.
Hey Bluegrass. Enjoy the cook. A little solitude is a good thing.
I honeymooned in Pipestem area. I love your state.

I graduated High School with John Osborne, and Joe Coleman was a year behind me. I knew an Elizabeth Nutter, she was in my class also, I didn't know a Jeff Nutter though. Not real sure about Jimmy Clark.
