Getting ready to smoke 2 5# shoulders for the 4th and I have a recipe for a Carolina red mop sauce. Does anybody use a mop sauce while cooking, and if so , how often do you apply?

I dont use one The Rub and the Whatsthishere sause do the Job

When cooking pork, I use Chris Lilly's Pork Butt Injection...
3/4 cup apple juice
1/2 cup water
1/2 cup sugar (dark brown sugar)
1/4 cup salt
2 tablespoons Worcestershire
Once it's loaded up inside, I just apply a generous coating of TexasBBQRub to the outside. I do not mop at all. Foil when internal temp hit around 165 and cook until around 195-205.

If I am going to use a mop, I wait till about half way cooked. Then apply once every hour till done.

I have used a mop sauce in the past...that type of cooking was popular here in NY style Q and grilling. I had a vinegar-cut bottle brand of sauce that I mopped ribs with...also when I grilled steaks. It tasted good.
You'll note I speak in past tense of this...I don't do it any more. My tastes have changed. I like the taste of the meat now more than before. I do like a LOT of sauce on pulled pork...sometimes.
