Stayed up friday night and did an overnight brisket. Everything turned out good. I think I should have left it on there for another 1/2hr-45mi to get it a little more tender. These were my best briskets I have ever done. It felt good being able to Q since I have not done it in a wile.

Great looking brisket 8) ...even the hotdog looked good although a bit lonely, on that big grill, all by itself :D :wink:

The chopped brisket looks real good. I like that as sandwiches almost as much as pulled pork. But for both sandwiches, I like them a little sauced.

you did a good job
i didn't understand why you had one lil' hot dog on the grill for a snack, at first
then after seeing all that brisket, i figured it out = you had to leave room to eat all that brisket 8)

Good looking chopped briskets there....
The poor little hotdog all by itself. Should have had a couple!
Oh, and the kettle looks good too. Don't you get a tad bit worried about using it on a wood deck? We burn a half-dozen apartments or homes down each summer with people cooking like that here.

M38A1, thanks for bringing that up. I am going to have to look into getting something to put under it. For the time being Ill just move it down to the yard.

We're leaving in 10 minutes, have one stop to make on the way down so
we'll be there by 5:30.

SG it was very peaceful when I did the brisket. That is what I love about night cook is it is so peaceful. Nobody gets in my way when trying to do stuff, and during the summer it gets hot so it is nice not to have the sun beating down on me. It must have been 70-75 last night perfect night for Q.

Zee I was cooking with mostly oak last night with 2-3 logs of apple. Most of the time Ill use more apple but I did not have any more cut up. I also need to go over to the orchard and get some more. Hopefully he'll have some peach too. :D

Hey Pigs...you're talking to Zee...they are apple-challenged down there. You and me got it in our backyards...for them it's passport-time to get any apple wood.
