I was playing around in the kitchen this afternoon with some dried chipotle peppers. Having eaten a tremendous number of commercial meals prepared with chipotle I've come to enjoy the subtle smokey heat. To top it off, I love jalapenos on just about everything so heat is not a problem.

However..... this was my first batch of dried chipotle's from Central Market. Cute little thiings they are. Sliced them the long way, then deseeded them. Ahhhhhh, that smokey aroma that just begs to be used in a dish of some type. Mixed the small pcs in with some spices and figured I'd let a yard-bird enjoy the mix for a while along with the italian dressing prior to the gasser.

Then I by chance lick a finger to sample a taste of that smokey heat. WOW! They are potent little buggers. They must tone down in the cooking process.

I had no earthly idea dried chipotles had that much kick.

Anybody else have a suprise like that?

Maybe it does BUT the Tabasco chipotle hot sauce ain't no hotter than he regular hot sauce.But I do love the flavor tho.Hell it can't be beat in my books

I still remember when my chipotles became "moist" in the cupboard after a while.
Smart DMīs best idea was to put em in the microwave for two minutes
to dry and crisp em up again.

When i got back into the kitchen and saw dark smoke coming out of it, i should have run for my life.
Instead i turned it off and opened it. Saddam Hussein would have been proud of the cloud that came out, it took my breath and sight instantly and almost knocked me out.
I went out of the house on my knees and it took half an hour to recover enough to go back in and open all windows.

Anyway, i still love Chipotles, even made them myself a couple of times on the WSM.But i never let em get wet again.

I will NEVER forget the day i was chopping some of those little guy's and had the urgency to sneeze which was followed by rubbing my eyes with you guessed it my fingers which had chopped chipotle juice on em :cry: :shock: :shock:
I once fell off a roof onto a wooden fence, and that tickled compared to the pain i was in on that day.

They are hot!

Make sure to wash your hands before touching them. One time I touched one and went potty. Boy was it burning!!

I felt num down there for like 3 minutes :D

They are hot, alright. I don't know if they get all concentrated because of drying, or what. I just took a bite from a reconstituted chipotle one time (ONE time), and that was quite a rush.

Paul's right, too. The Tabasco chipotle sauce isn't hot at all, but it sure is good. I've also had some Bufalo chipotle sauce that was very good, and it still had quite a kick.

When getting your peace officer's license, you have to be sprayed with OC spray (Oleoresin Capsicum) and perform some task afterwards. The spray is 50,000 scoville units. Now when I get shampoo in my eyes, it doesn't bother me at all.
