Alright, I am going to make my first pot of Texas Red, I've been wanting some since I first saw it on this forum. I've never made it or tasted it, but I've got clearance from the "boss" to make some for a new years eve get together. So I guess I want to know how to make some really good Texas Red, and is it really that much better than just good ole' chilli???

Posting you a recipe over in the recipe section called Dago Red's Woppin Good Chili. Aint guarahnteeing it got Tejas roots (think it come from the general vicinity of Sunny CA) but it was the world champeen of the ICS crowd back in 2004. Stuck $250 in the hip pocket using it at a beer joint cookoff a few years back. It's made with commonly found ingredients. Got some rave reviews from a fella who tried it over on Dave Kloses forum. Think you would find it acceptable.

BBQ 101 would be the guy to chime into here on that particular subject. I think Bigwheel is also a chili cooker. Come to think of it Serialgriller and his wife are eggcelent chili cookers too. They should be along soon.


Just so you know-its against the law in Texas to add beans, least wise thats what I heard.

You musta heard wrong. I love those dark red kidney beans in my chili. What's not right is using ground beef. Gotta be chunky, and somes times it doesn't need to be beef either.l

I knew that wouldnt take long. I reckon its all about what you like. For me, beans are meant for rice.

Well, I guess I'll giver'a shot. Sounds like its done well. Is red jalapeno powder the same as cruched red pepper?, and where do I get arrowroot?

now that right there sounds like one mighty fine chili recipe.......i think i'm gonna have to give that one a try. pretty sure red jalapeno powder ain't the same thing as crushed red pepper. if you can't find it, you could probably substitute cayenne pepper in a like amount. can't help you with that arrowroot business. out of all of the chili recipes i've come across, this is the first one i've seen that calls for arrowroot.

I'm thinking cayenne pepper is a lot different than red jalapeno powder. I could be wrong, but I'll let the experts clarify it

Arrowroot is a pretty common item found on the spice aisle at the supremarket. I wonder if you could substitute masa flour in it's place? I have never seen or heard of red jalapeno powder or New Mexico hot chili powder, but I would be real careful with the cheyenne peeper, it will have ya spittin fire like a dragon.

red jalapeno powder is chipotle pepper powder. My Kroger carries it and you can find it at most spice specialty shops. Hope this helps.

Well back when I was making this partciular recipe fairly frequent found "Hotter than Hell" brand hab powder subbed for the Red Jap powder fairly well...and sure the chipolte powder work just fine too. Arrowroot is some type of kissin cousin to cornstarch..which the two is real interchangeable..so I always just used cornstarch. In fact I have got fairly snobbish here recently and dont use any thickners at all. Just watch your liquid ration on the front end (as in starting off with maybe a can and a half of broth on the front end)..and get ready to crack the lid or take it plumb off to reduce the moisture content as you approach the last dump. Or add a bit more broth if it starts looking too dry. Little touch of cayenne mixed with some Gebhardts should work just fine to sub for NM hot. I dont like any type of corn products in there as it seems to give it a gritty mouth feel. Hope this helps.

The funniest episode of Alton Browns Good Eats I have ever seen was when he made chili that he called Texas Red. It had 2 or 3 different meats in it and no beans. I laugh my a## off every time I see it. You might give it a try.

No, lol, he was dressed up like a cowboy and had this sidekick. They went to the store to get the ingredients and it was funny. I guess you just had to see it........ :roll:

I hear you, I don't like beans in my chili either. My wife does so we have cut a deal. When the recipe calls for 2 cans of beans we use 1 instead. I still end up picking some out. LOL

Chili is good all kind of ways. You can put beans, rice, fritos, top it with onions, shredded cheese, put a dollop of sour cream, mix it with elbow mac. Just for the record, I like mine straight up with chopped onions on top.

I like frito pie myself. Good stuff, not canned chili like that crud from Sonic.

Watched a little of Altons Chili episode last night but didnt catch it all. Thought some of the stuff he was doing seemed fairly plausible. Thought I seem him cooking it in a pressure cooker which I have been sorta interested in learning more about. There is an old Moss Back CASI cook who does the pressure cooker method and supposed to be a purty formidable cook. Claims to have it total ready from the raw condition in 12 mins. Think I wander over to food TV and nose around a bit.

Well went over and checked out Altons full recipe. It looks purty sickly. I was on board till he started adding the picante sauce and the taurpolian chips. Shoulda knowed something was amiss when he grabbed the lamb.

Well, sent the wife out and she got the ingredients to make Dago's Red (thanks BW). Gonna make it Sunday. I'll let you know how it turns out. Wifey picked up 4 lbs of top sirlon v/s tri tip, I assume this is ok, just more $$$???

Outta work just fine. I never could find any of that tri trip stuff myself. Think you got to drive to the left coast to find some. I always used Mock Tender Chuck.

I made Dago Red's chili for a chili cookoff at work earlier this year. The "judges" only experience with "chili" was opening a can of Hormel's. I thought it turned out pretty good and so did those who've eaten a lot of good chili in their days. I didn't even place, but the winner's looked and tasted like you'd used the meat from a couple hundred taco bell tacos, then watered it down and threw in some jalapenos :? .

:lol: I must say I make a good pot of Texas Red. I learned from Bigwheel and Redneck. They are the Chili experts around Ft Worth. Stick your nose to close to Rednecks Chili pot and you might just feel a wooden spoon cracking ya in the face bone :wink: . If you go to the Casi web page you can find great Chili recipes you just have to tweak em to the way you like it.

Well Redneck been whuppin me like the proverbial red headed step-child on our past several contests..so guess we betta let him occupy that exspurt division by himself for a while. *****ley and Scorch have also been coming up with real good stuff here lately. Now Scorch did have some type of mishap last time and come in with the Dead *ss Last trophy. Guess he forgot to put meat in it or something. Course when Bob and Doris Coats shows up it usually just a matter of which one places 1st and which one places 2nd. They seem to take turns on that deal. Here is a good shot of Redneck collecting his money and a real sad pic of Scorch getting his hosses butt trophy.

Now it's funny you should mention Bob Coats because I tried Pendery's version of his Terlingua winner. Did not like it, but then again, I like beans! :wink:

Speaking of Bob. Had sort of a funny thing happen at one of our cookoffs in that the 16 year old grandson was using Bob's recipe from the CASI website and used it to place higher than Bob did. One of life's golden moments I guess. Course Pee Paw helped him tweak it a little :wink:
