If this is your first shot at the cheese thing, don't oversmoke it. My batch at 4 hours was a tad too much 'flavor'.

Ran it for about 2.5 hours. Wrapped in plastic and in the refer. We'll see . I have been told to let it rest and mellow for a couple of days. Gonna need to resist the temptation until New Year's Day.

Yeah, I've been watching that white 'blob' over central CO and it just hasn't moved all day. The web-cams are also fun to watch from rainy Tejas of all that snow.
I'll say it again - you sure live in a pretty area.

mkd - Folks may have been razzing ya just for the fun of it. :) but I'm not sure we all thought you might actually get out in 3 feet of snow and fire it up. 8) Way to go :!:   I take it the wood was dry. I hope you don't have to drive much in it. Even 4-wheel drive ain't going through 3 feet or more of snow. Let us know how the cheese comes out.

My cheese store guy says he smokes all his cheeses at 85 degrees maximum, and minimum of 75 deg. And his rig is the size of a small bedroom...hundreds of pieces hanging in these little net bags. SOme on trays, but most on bags and a rod thru the upper part of the bags to support all the hanging bags of cheese.

Hey the razzing is half the fun of this group :P
The fact is I got all the snow moved with the snow thrower early this morning and The Wife, Kids and I were all out sledding for most of the day. Tons of fun but I think the morning is gonna call for LOTS of Advil.
We stocked up before the storm and always have reserves for these kinds fo storms.
As far as getting out...We'll we got a new pit mobility device about a week before Christmas ...The old minivan was not gonna get the job done up here :D :D :D :D :D

The old topper get the once over weekly with the clippers. Gotta tell ya...best time save in the workd. Saves $...no haircuts needed, saves time...ain't used a hairfryer in years, no bad hair days, not hat head or bed head....and a bottle of shampoo last a year!
david brace

well, I gots to admit...I never thunk of it all that way, but you're right. Especially like the shampoo part. No combs or brushes to buy either...but weekly??? I dunno, I guess I'm still stuck some in the 60's. Not that my hair is long at all, but I just think that we should have SOME...my wife is ticked at me because I have no gray hair at my advanced age, and she's had it since her 20's.
But isn't it cold without hair?

Being hariless is also more conducive to ski cancer too. That's why the Lord gave us hats and sunblock I guess.

Hey MKD
That is about the most beautiful picture I have seen in a long time. That is what it is supposed to look lilke here in Northern Michigan. As I type this, it is 34 degrees and foggy. Had a green Christmas. Outlook down the road says no snow and no really cold weather.
I am a die hard ice fisherman. NO ICE
Good looking pit. I am envious

I used to tell my sons when they were 6 or 7 about when I was a kid their age and we'd wake up and go down to the creek and ice skated and played hockey all day when the litle creek froze over...and my one son said to me, "where'd you grow up...Norway?"
