Well, I made some Gumbo (Smoked duck breast/ andouille, chicken) and shrimp creole yesterday. With apologies to Kenny Maggert, the gumbo turned out kinda thin, but that is how my wife prefers it. Had about a dozen over for dinner. Also included are some other shots, but I can't seperate them because I don't understand the new version of Easy Share. I used a good jar roux. Bought a case online. Doubt if I'll ever make a roux again!

Woodman...good lookin' gumbo there. I want to try making some someday. Wonderful family you got too. Did I ever tell you I come from Ohio? I live in CA now, but still have family there.

Looks good Woody. That Savoie's Roux supposed to be the best there is. Got a jar of that stuff in the cabinet just aint got around to using it yet.

Hey Rory, Just in case that you can't get your hands on any roux out where you are @. Making one is real easy. Just watch & make sure that you don't burn it while cooking it. If you need any help, just gimme a holler & I will be more than happy to assist in any way that I can.

i've been trying to talk the better half into letting me make some shrimp gumbo... this is going on a year now.... :?
up here, i've been told chelf paul prudome?spelling? brand makes the best andouille sauage...i wouldn't know, never seen it in the local megamart..
you guys are making me hungry...

Hey OM, that's relatively easy to make too. The roux is justa a little different in that you use butter instead of oil. You make into just a blonde color & go from there. Remember 1-1 ratio in flour to butter or oil, whatever that you decide to make. If you see that you need more flour after you put all of that together, then -by all means go ahead & add some. That's all there is to it.,,, Easy :wink: :D

my understanding is the roux is going to be around brick red for good gumbo. if i recall correctly, this takes 20-25 minutes or so..
would a ceramic glazed iron pot work good for this?

His sausage is good as well as Emerils. If you can get either where you're at. They're kinda pricy though.

Somewhere between a hershey bar and peanut butter!Don't burn it! I use a Le Crueset enamelware pan and stir it for 45 min to an hour. Make a double batch because it keeps forever in the fridge. I used Bruce Aidell's Andouille.

Black Iron pot/ pan :shock: ...actually I'm kinda fibbing. If I make it for the house I usually do use the pot that I'm cooking the gumbo in (usually black iron). If I'm cooking for an event (say 30 to 300), I'll make my roux in a (5 or 6 qt.) Magnalite pot :oops: . It lets me make a big batch of roux and the contrast between the light colored pan and the roux lets me get it as dark as I need.
For gumbo...as dark as you can get it before being afraid that you'll burn it...probably take anywhere from 30 minutes to an hour. Paul P. does a quick roux but the chances of burning it are much greater and kinda like Que...low and slow is better :wink: .
I just hate cooking rice for that many people :roll: .
