Brisket just went on. 11 pound Choice. Trying Dale's as the binder this time. Using the new Texas Wild BBQ Rub. Plan on a low and slow cook. Would like to foil it around sun up so that I can head to the golf course by noon.

I just put mine on as well, 6am.........Pre made some stuffed chicken thighs last night before bed as well, looking forward to those!!!

I'm getting too old for these all nighters! Up every hour or so to put a couple of logs on the fire. Wrapped the meat after about 8 hours and temp was 175. That's too high for me normally but since I was asleep most of the time............... and then I usually add some liquid as I wrap it and I forgot that as well. It's been in the cooler since 6 so I'm going to go ahead and slice it now and see what I've got.

Oh that Texas Wild!!! What a nice flavor in the juice and meat! I didn't get a deep smoke ring like I usually get but the texture and flavor is awesome! Love that choice cut of meat.
Next up this aftertoon - ABT! Come on up Zilla. :lol:

Looks like a perfect, natural smoke ring to me and the beef looks juicy and delicious! Hope you golfed well! I picked up sticks in the yard and burned a "recreational fire" in the fire pit! :wink:

Yeppers Mike - Looks like a great end product as usual.
Hope it wasnt' too windy for chasing little white balls. It sure was here. :lol:
