View Full Version : FFA Stock Show Dinner

Dad and I cooked this weekend for the local FFA Stock show. We ended up cooking 125lbs of Beef Shoulder, 35 lbs of Elgin Sausage, 15lbs of beans and tater salad and fixins. The dessert was provided by local students that participated in the Homemaking part of the fair. I hope I have the link created....sorry not very many pictures really busy.

Sounds like a good time.

Just what does one do with a beef shoulder? How's it served? Do you pull it like a pork shoulder?

Well the 125 lbs came in 6 pieces of meat. We first begin by woster then followed by rub the night before and out in coolers. Put on pit and cook for about 4 hrs. Then we cut in half and plastic wrap and wrapp and back on until
190deg. Pull and cooler again until ready to slice.

We slice the shoulder just like brisket, it is a little more difficult becasue of the slice of meat. Once sliced in tin tubs and some drippings and foil, then back on pit until ready to serve. Dad and I are very active in the FFA. So we have to help with show and with the dinner. It can be very tuff, and now one like to volunteer but they sure do like to eat. :evil:
