Here's a quick and dirty album of the cook this past weekend. Brent volunteered his services and Trinity to help out with the Round Rock highschool basketball teams fundraiser that was held in conjunction with a huge softball tourny over the weekend of Jan 8/9, 2007.

Chris (dahorns), I and Don (don_tortilla) hung out for most of the event to give Brent a hand in this huge effort. In all, 21 briskets were completed along with 650 or so sausage links, countless hotdogs, 80 burgers and three racks of 'experimental' pork spares. In addition to the major cook, we also managed to do a 'point', try some jelly on Whataburger breakfast tacos, cook some ribs for us, feed the umpires for free, and not get hurt over the whole weekend.

The totals aren't in yet, but we're guessing the financial marks were met and quite possibly exceeded.

Definitly a good time, Trinity is a beast of epic proportions. ANd, I'm kicking myself for leaving before the ribs were done......Thanks for the pics M38, I had a great time hangin' with you guys last weekend!

AWESOME! You guys did a great job the grub looks amazing. Brent i wish i could have made it to help out and a chance to put some faces with the names.

Well thank-you. I've sort of become addicted to these little digital cameras. Now that santa brought me a newer one, (that i haven't opened the box yet) I'll keep dragging this old one around to bbq and scooter events. The one I've had for several years is a Fuji FinePix.

As for workout on Trinity? Never broke a sweat or got the heartrate up. That pit is amazing in how easy it is to use. With 3/8" pipe/firebox, once it's up to temp, those doors can open and close a LOT without any such hiccup in internal temperature after a minute or so. The Ashcroft guage does it's job perfectly. Just 'set it and forget it'. Brent really did well with it. We did find a few hotspots here and there, but that was part of the fun.

The pot on the FB is just water. It was kept just below a boil and we would drop our utensils in there to keep them clean. When we killed the fire to move the pit at night, we used the water dumped over the coals that we had scraped out into a large alum serving pan to knock 'em down fast.

The little point was good. Not great, but good. I guess I didn't really know what to expect. The surface that had the glaze on it was excellent, but beyond the glazed bark, well - it was just brisket IMO. We had some people come by and try a pc of it and they thought it was great.

Corndog, we told the people in the concession stand to load them up with meat, since the customers were only going to buy one anyway ($5 each). They would take them back to the stands and others would want to know what it was and where to get them. Before long, the lines would form. So when you make them, stack them high. The cost is minimal for the return. Also, we had them make one and set it next to the windows so people could see it. Many just said "I want one of those"!

excellent job Gentlemen. I love the brisket boats. I showed the daughter the pic of the ribs. She has demanded that I pull the Predator out and get to it. It's a balmy 28 with a stiff westerly wind of 20 mph. I'm sure the Predator wont mind, but I sure will. Great job guys.
