Got a two lb bag of the WILD rub for a Christmas present and did a couple pork butts on Friday. Without lie, these were the best pork butts I have ever done, the flavor of the bark was absolutely great, and I could't ask for a better tasting finished product. Used a mixture of apple and sugar maple wood for the cook on my WSM. Thanks Bill...GREAT stuff.

So, you are thinking about taking the pork category from the esteemed Uncle Stubba?

Nice butt, indeed! I agree on that Texas Wild. I used it for my New Year's cook, and it is some good, good stuff!

Very nice looking butt there. GREAT bark (which i love...)

Now, if there's any left-overs, go find some flour tortillas, warm them on a skillet on the stove for about 60 seconds, and pile some of the pulled pork on them, roll it up and enjoy.

Ah, I see you have discovered the wisdom of Don_Tortilla.

Ah yes. Grasshopper has learned from mighty don_tortilla the virtues of first cooking said tortilla prior to ingestion into the gullet. Before my chance meeting with "the master", I had simply nuked them with pork inside. Now I know better and am at peace with my tastebuds.
