O.k., I know I have been busy lately and not been around as much as I want to be, but where the heck did "Wild" rub come from and what is it! I know it has to be killer, never had anything that was'nt from these fella's :wink: !Also I am going to do my 2nd brisket the last weekend of Jan. The brisket I got was from the place I get my steaks from, my local Independent Meat Man/new found friend :D He raises his own black angus cattle, no hormones, steroids, all natural, has them slaughtered and processed and has a little meat market he sell's them in. (He can and does ship all over the country) BEST steaks I have ever bought, NO Contest! Anyway, I got a brisket from him, it is rather small 4.88lbs, he said it was a brisket not a point, It just looks small to me. Should I smoke this thing different, help on this one please!

I have just cooked my 3rd brisket saturday, so I am no expert but it was the best yet. It was a small trimmed 7 pounder I rubbed it down and rapped it on Tuesday night, so it set seasoned 4 days. I have a char-griller smoker, so it cooks a little quicker than big pits, I put it on at 7:00am and pulled it at 4:00 pm I cooked in the foil for the first 6 hours. It was the best and most tender I have ever eat.

Sounds like the flat. I wouldn't do anything different on cooking it. Just watch the temps so you'll know when/if to foil and when done. Don't overcook. Enjoy!

Wild, according to Blake at Q-Fest 3, was an accident. Bill, Blake and Josh were making up some rub batches and Josh apparantly missed some ratios. They tasted it, cooked with it, loved it and the rest is history.
As for the small brisket, that really does sound small. I'd still probably do the same thing as with a larger one, ie: pour a coke or dr. pepper on it, apply "Wild" to a consistent paste, but not too thick, run it in the pit at 225*F with your favorite wood until the internal temp was 197*F. When 197*F, I'd foil it and place it in an igloo type cooler for at least 90 minutes, then when ready to serve pull it out, dump the juice in a pan and slice against the grain into pcs about a #2 pencil width.

Ok, I emailed my meat buddy, I will post when I get some info. I really can't say enough about it. I used to drive 25 minutes to a Bruno's to buy my steaks because they were consistent and good. But the first time I rubbed one of these steaks it felt different and it had the best flavor,I was just different (in a good way). When I cooked them, during the course of dinner my 9 year old daughter said "Is all we are going to talk about tonight is how good these steaks are!" And to that point, it was all 4 of us were talking about. I have no interest in his business except for the fact that I have NEVER gotten a steak that was not tender, juicy, and full of flavor. I told him after the first steaks that I was so impressed that I was going to be his posterboy for him. That was about a year and half ago, funny about a month ago local radio station came to me just to talk about his product, now I'm speaking on 4 commercials for him :shock:

I dont think "Wild Rub is a noun. I think the wild was an adjective and the "rub was a verb and ifin I am not mistaken it had something to do with Woodman and 101 at Q-Fest. I am ñot súre though

All beef and pork is locally raised, antibiotic free and hormone free, grain-fed angus calves. Shipping usually adds about $3-5 to the per lb prices. That is substantial, but i've had quite a few folks just want to try our meat. Just let me know if you need anything else.

Steak prices look nice 'cept when you add $3-$5 when it's shipped.
Brisket is $4.05/pound though. :shock:
Pics look nice enough though...I think I'm hungry for steak now (like that's anything different :roll: ).

A little pricey :( , maybe with ship. But of all the expensive mail order steaks I've tried, some much higher. It's a good deal :D . Couldn't do it everytime you wanted a steak, but when you want to treat yourself, I don't think you would buy one and after consuming think it wasn't worth the$$$

price's a little high, I just bought a brisket last week for $1.68lb, and I bought a whole ribeye for $3.99lb bone in.

$4.05 a pound for Brisket?! That's waaaayyyyy too damn high! Just go to Wally-World or Sam's club & get your briskets. You will be MUCH better off.

The prices look good to me, but I have always been very leery about ordering perishable food by mail...you may be ordering it online, but it's being shipped by mail. Delays, weekends, heat, freezing, handling, adverse sanitary conditions...not a good idea in my book. Sorry to speak against those who think it's a good idea. I will admit though that it's very handy.

I was just at Walmart last night and scanned their meat section...no brisket, but that's to be expected here in NY. I'm telling you that it's assumed that when you say 'brisket' that you mean 'corned beef brisket'.

DB, could you get a butcher to order you a brisket or would that be cost prohibitive? Maybe you could get with several friends and order a case or two and it would be cheaper. Have there ever been briskets in any supermarket where you live?

That's how it is here in Ohiya too.
I've found that certain butchers as well as Walmart super center have briskets but if they don't have them out, and you ask someone, they almost always show you the ones with the little spice pack with it as well as instructions for corning it :shock:

You guys in Texas get the brisket for dirt cheap. I see the brisket sell for $3.00 per lb. The pork shoulder go for .99-.89 cent per lb. The pork butt goes for a dollar and change.

Shoulder and butt are the same here but I can get brisket for around a buck and a half.

It is a meat processing and packing plant. so it is also fresh. I get the pork and sausage from them. Brisket that is at Sam's
