Anyone got experience doing an entire shoulder clod? We're going to buy one next week, probably around 20lb or so, but I'm wondering about cutting it up into a couple of smaller roasts before we cook it. Might make it easier to freeze & store after it's done.

A shoulder clod has a good bit of tough connective tissue. You might want to try a whole chuck cut into roasts the size of your choice and tied. There will be alot less waste. JMHO

Dad and I just got through queing 125lbs of clod on the 6th of Jan. turned out really good. Its a tougher piece of meat and the ones we had came in 6-8 piece can't remeber. Took about 16hrs to cook. :D
