Thanks FD i've made em before just with diff stuffing like to see what others are using too always open to new ideas. i will have to try kp's version looks awesome to me.

I have never done these, but I have to say those pics are a Cullinary Masterpiece!!!!!!! I will be trying them soon, thanks for sharing. I assume that they were boneless, no?

I bought the plain thighs, but I pulled skin off and I d-boned them. I cooked in a Char-griller smoker, coals in fire box, I put them on when coals had burnt down a little at about 325degrees, I left on for about 2.5 hours, when I pulled them temp was about 225. no wood, just Kingsford on these. If you havn't tried yet you need to. :lol:

Of all the meats I've ever grilled or smoked, this is my favorite recipe. I've used several different cheeses and it hasn't made a difference. Sam's carries the boneless, skinless chicken thighs in 6lb packages (usually 22 thighs per package). I put them in the pit at 225-250 and take them out a few hours later. If you really want to kick them up to another level, glaze with TPJ Spicy Peach Grilling Sauce 30-45 minutes before taking off the pit. Out-Of-This-World-Good!

That is some good looking and no doubt good eating vittles you have there.
I have been reading some of the old posts here and ran across these chicken recipes. Did not have thighs, but had breasts. Did the same thing you did. Wife thinks I am the food god now. May not be a good thing. I think she has decided to quit cooking :roll:

Fat Daddy..Those look awesome ! Glad you found and liked the recipe. I've never had a complaint with these.

The reason I say over medium coals is I like for the bacon to get crispy. I actually cook these on my offset as well, not "over" the coals, but very near the firebox. It usually takes me about 1 hour. Once they get "done", I move 'em a little closer to the firebox to crisp up the bacon.

Really glad to hear that so many folks here like 'em !

they were great, everybody loved them. I left mine to the far side away from the fire the whole time, but at the high temp it was at bacon got crispy, but I did lose some cheese though. I am going to do it with breast next time.

I also cooked them with a water pan under them with beer in it. I think that kept them real moist

Well, I liked the looks of those things so much I decided to grill some up for supper tonight. They're on the grill now. The wife thought they looked pretty good before I even put them on the grill. I'm looking forward to giving them a try in about 30 minutes. Also plan to have some grilled peppers as a side.

Sorry DB, no pix. :( However, they looked just like the one's in the photos posted by Fat Daddy. They turned out nice and brown and crispy. I used Texas BBQ Rub on them (inside and out) and they tasted great. My wife gave them a 4.9 on a scale of 1 to 5. She won't give me a 5 on anything, as she said that leaves room for improvement even if it isn't needed! :)

Fat Daddy, thanks for sharing. I now have another great recipe to use in the future.
