FYI, pork leg is Us$4.50 a pound on sale rolled and boned. Ribs are $6 bucks a pound. Pork loin $7 bucks a pound. So, it is an expensive lesson and I hope to be a quick learner.... :)

Beef rib roast $17 pound, chuck roast $10.50 a pound, rump end $14 a pound, mince $7 bucks a pound.
How does this compare? The good stuff goes to Japan and you blokes!
The farmers are getting 435c a kilo for yearling and the major retailers are holding out to 400% plus to us the consumer. We are having the worst drought on record and farmers are selling new lamb for $8 bucks each! Retailers are still marking up full price. It's bloody disgusting.

I'd say go to the farmer and pick yourself up a few lambs.

What about kangroo meat? Are they lean or fat meat?

Very lean and healthy. The only part worth cooking is the lfillet, loin and rump. Lightly marinated and oven roasted or quickly grilled and served rare. You will not catch any bugs!!!! Has a strong distinct flavour. Fresh crushed rosemary and black pepper is what i normally use. Goes well with chilli and tamarind, cardamon, cumin seeds and coriander seeds. If you smoke it i'm sure it would come out tasting like jerky.
Quick cooking tips-wipe with kitchen paper once opened out of packet. Remove any left over silver membrane. then speedily rub with olive oil to stop it from drying out. Add favourite herbs. Should be cooked straight away at a high temperature for a very short period of time. A fillet normally takes about 5 minutes in a hot frying pan or 220C oven, loin 7 minutes in the oven. Transfer it to a hot plate and let rest for 10 minutes then carve away. My wife and I normally do this and slice it so it will go into a warm salad for lunch or dinner on a hot night.
Mince is excellent for tiny meatballs in italian sauce! Can be dry if over fried to start. Love it with Cumin.

I think we'd all like to see some pictures of kangaroo raw, being cooked, and when it's served.
Very good having you here.
I have had Roaring 40's bleu cheese from your area...very good and very expensive for the smallest sliver.

jamojman, kangroo meat sound very tasty. If beef and pork is so expensive, what do local buy for meat? Mostly lamb and kangroo?

It sounds like a golden opportunity for you to go into the meat market business. I mean, buy low like the other retailers and then mark your meat up to a fair price (unlike the other retailers) and you can probably get rich by opening one store after another. The result will be a price war.

Is that in Australian $ or US $?

All prices US. I am also looking at one of our largest supermarket specials and the price is spot on. 2 loins and a rump coming up just for you guys! 1 panfried the other oven roasted. If i do it for Saturday lunch I guess you will have them for Friday night viewing!!!
Retail market does not match the gate price and it is against the law big time for farmers to sell direct to public.
Like I said, I hope I am a fast learner!!!
Lamb leg is pretty popular in my house as it is only US $3.30 a pound on a good day and normally US $ 6.50 a pound. Other cuts like cutlets and rib roast is normally US $15 bucks a pound!! Not cheap with 2 hungry kids!! But there are more of you over there to help keep pricing down :D
Jamojman,
Just for the heck of it, how much is chicken? Welcome to the forum.

Organic chicken is about US $ 7.50 a pound, corn fed chicken $6.00 and normal supermarket chicken $4.00.
Turkey bird 10 pounds dressed is about $60
How does this compare to you folks. And yes, that is Canberra prices, the Nations capital.
I just went online to check out some Sydney (where we had the olympics) butchers and they are charging US $30 a pound for beef rib roast and about $9 bucks a pound for organic chicken.

A locally owned supermarket (but a member of Associated Grocers) had leg quarters (leg & thigh) @ .19 cents a pound for a 10 lb bag. They ran the special for 5 or 6 weeks. We had chicken cooked every way that you can think of (twice).
Pretty common to find them @ .49 cents/ pound.
