Have fun, I was up at 3a yesterday doing the same thing. Struggled with the humidity. But it turned out to be GREAT. 5 racks of baby backs (glazed with honey), a pork loin, and some Southside sausage. Everyone ate good and there was very little left over. Good luck with your cook Freed!!!

All turned out great....held the briskets successfully again for 5 hours and the marinade was excellent!!! I marinaded the packers for about 12 hours or so and then put them on nekked!!! I really liked the flavor!!
Here are the notes
13# packers (2)
marinaded 12 hours
cooked fat side down til 168
wrapped
cooked til 200 (one was 198 and the other was 200)
pulled and held in cooler 5 hours (never opened it)
Very successful!!!

At least someone's got my back....thanks yak!! Nice pics by the way. If I was ever to take one on loan, you'de be my man, but isnt that kinda like finishing off in the oven:D
