A co-worker asked me if there was a beef cut like a pork butt/shoulder. I honestly didn't know the answer and he was wanting to know if it cooked like pork and pulled like pork.

About the only thing that came to mind was the actual shoulder but the cut name????? and how to prepare/cook it I drew a blank.

Any help out there to broaden my knowledge is always appreciated.:idea:

Yes .. you could compare it to a clod, but that is where the comparison ends.

Beef will not pull like pork. Not enough fat, way to lean. Its just the way it is. You might tell 'em to look at like this ... you cant get bacon from beef either .....

As far as cooking clod ... same as a brisket ... I have had both side by side, both are very similar. Brisket is probably leaner in my opinion.

Thats what I was wondering. If you want a leanish sandwich you use sliced or chopped flat. If you want a to die for juicy samdwich you use the point. There usually isn't a lot of point to go around and I was thinking that if the clod is like the point it could be substituted.

Can somebody tell me where I can find shoulder clod? I went o Walmart and Sams at lunch and had no luck. By the way both Sams and WM have packers for $1.48 a pound. I was in a hurry so I didnt think to look and see if it was choice or select. :banghead:

The only place I have ever found a sholder clod was at a butcher shop.
I have only bought them on a few occasions. I don't recall ever seeing them at a supermarket.

The big food wholesalers have em which in this part o the world be Sysco and Ben E. Keith. Sysco is purty persnickity about selling retail. Ben E. Keith has a "retail dock" or did where Joe Blow can go buy stuff without a tax number etc. Sure you have to buy it by the case or whutever.

Beef may not pull like pork but it does shred (as in shredded beef in Tex-Mex food) and it is some kinda tasty.
It ain't Q ... but it ain't bad !
