I have tried the chains. I have tried the smaller proprietor joints. I even tried a guy with his pit on the side of the road serving Q.

All this talk in here about the TLC we give our meat; the rubs, the spices, TPJ, brines, the whole process of getting it cooked to perfection - is lost on all these people.

For seasoning, I THINK THEY USE LIQUID SMOKE - very lightly. You couldn't find a good piece of hickory/pecan/oak/mesquite anywhere in the joint. I guess salt/pepper/garlic/onion/paprika & so many other spices might offend a taste bud. Sauce is ketchup with brown sugar /honey &/or syrup. None of this bothersome all night cooking for these folks! And be sure to cook it to pieces, no need for teeth here :)

I thought maybe it was just me, but I get similar comments from folks that attend my Q parties. It spoils them so much that they just can't go back to that 'commercial' Q.

SO, if you know of a place around Houston that actually makes good Q, using wood in a smoker with some good rub/seasoning on it, let me know where it is.

For the Houston area, usually people say Burns, Williams, and Thelma's (I think hers is more Southern style).

I haven't been to them yet, though.

You can take a lot of reviews with a grain of salt, as it depends on one's tastes and perspective on what represents "great" barbecue (look at the reviews of Demeris as one example).

Thanks for the link. I had no idea there were so many q joints in so many places. Must be one behind every bush !!!! It will take a while to read threw all the comments & see if any are worthy of consideration !!

Then again, if I have to drive to the other side of Houston for it, I'll just do it myself :)

Thank God that I make my own with the help & knowledge from all of ya"ll in here. We have a few "Q"joints up here but nuttin' that gets good reviews & I know why. most of the time they ain't worth it.Hey Craig, I can empathize with ya man.

Heh - speaking of one behind every Bush, George H.W. Bush's favorite restaurant in Houston is Otto's Barbecue.

I know .. It's to easy .. but I have to .. Dusty and I have this thing about
slamming each other .. back and forth .. and well I just have to .. understand?

Anyway ... if you gotta know what it tastes like ...

Just eat your own BBQ ....

I had a takeout chopped beef sandwich from Thelmas and enjoyed it..huge for $3.95...it was too crowded to eat in there...tried a chopped beef at Burns, and enjoyed it also...I like to try hole in the wall type places, beer joints included..:) but still hard for any of them to measure up to what most cook here..
