Hi all! I just received my sample package of Slovacek sausage and I am excited to try it. I have searched the recipes here, but can't find one. I know one of you great guys has at least one! T

T, good to see you are still alive! Take that Slovaceks, smoke it until done, wrap it an a 10" flour tortilla, and slather it with pineapple habanero Texas Pepper Jelly. Can't beat it!

Thanks Woodman! I have been sooo busy! Workin part time, going to school full time! I'm still smokin', though and loving it! No more 22 hour brisket cooks now that I'm living here in Texas. Musta bin the elevation whilst in CA! Hope you're doing well! T

It's good to see you around, T!

Put that Slovacek on the pit for about a half hour or so, or until it's good and hot. That's all it takes.

Woodman is dead on about the tortilla and the TPJ, and Mic is absolutely right that it's good any way. This weekend, I went to town with some Slovacek jalapeno, some whole wheat bolillos, and some Zatarain's mustard. I was happy.

My first and only time having SLovacek was when Zee brought some and Greg In Jersey cooked it up. VERY good stuff !!!

Criminal justice, eh? That always interested me a great deal. However, since I found myself rooting for the bad guys too often, I thought I ought to stick with the civil world.:twisted:

As for wood, I tend to like pecan or mesquite with my Slovaceks. Between those, though, it's just a matter of what I'm in the mood for or what may be handy. Oak also is just fine, but pecan and mesquite make my smile widen just a little more. Since the sausage usually is only on for a half hour or so, it's fairly easy to select which wood I use for the sausage. I bet some good fruit wood would go well with the jalapeno.

Hmmmmmm, fruit and jalapeno . . . . I may be on to something.

That sausage is so good, though, I've even gotten away with just putting them in the oven (:shock: ). I wasn't happy about it, but I was somewhere with nothing to burn wood (i.e., "I know wood tastes better, but gas is so conveeeenient" :banghead:). I didn't let that person eat any sausage until he promised me he would, at least, pick up a cheap charcoal grill. He did, and he thanks me often.:cheers:
