I haven't been totally satisfied with my ribs yet, butt is amazing, but ribs are okay. Tried a different rub this time. Also, mine never tend to pull up around the bones. These have been on about 4 hours at 210-220. Cooked on the little Chargriller.

Chances are you haven't left them on the pit long enough, especially at that low temp.

I'm going to leave them on a little longer this time and see what happens. Getting hungry though.

Quick rule of thumb. When you pick up the rack by the end and it bends 45*, and the meat tries to split, they are done. At that point the ribs should be exposed 1/4" to 3/8".

I think they are done. Put a little sauce on them to let it cook on a few minutes and then its eating time. Finally, I'm starving.

Ribs were very tasty. Very tender and perfectly flavored. 6 hours smoke at 210-220 and they were perfect.
