That sure is a good option and what we will do with leftovers along with some grilled onions, sweet peppers and add some jalepenos.
Right off the smoker though..plain with maybe some sauce on the side.

Looks good. But I wanna know how you kept that cutting board so clean while cutting that brisket ?
Oh, to answer your question, Brisket Tacos . Leftover brisket, hot grilled tortillas, fresh homemade pice de gallo (tomato, onion, cilantro, serranos, garlic powder, salt, lime juice), grilled onions.

looks might good.....Recently I chopped up a whole brisket mixed it with some homemade spicey bbq sauce and then vacuum sucked it and froze it for plan aheads. That was some gooooooood stuff, pulled a Rudy's and threw it in a flour tortilla or 3 and gobbled them up!!!

On white bread with a little bit of horseradish sauce. For tacos I like to smoke chuck roasts to about 205 and shred them.

Those tourteyas are alway handy for brisket, pork, sausage. Smear on some TPJ, slap some meat on, top with bread & butter jalopenos.....not dat's how I like it.

Let's see, I like it cold out of the fridge, hot off the smoker, piled high on a bun, slapped in a tortilla, sliced and dipped in sauce, midnight snack sammies, added to beans, chopped up in Bill's taters, etc. etc.
I like to chop left over brisket to use in spagetti sauce instead of ground beef! :D

When it's fresh off the pit, just straight up. I usually have a small meal while slicing.
My favorite probably is chopped, mixed with a little smoked onion sauce, and piled on a wheat bun with pickles, raw onions, and about a half of a roasted poblano. If I'm not up for roasting poblanos, pickled jalapenos work fine, and so do the roasted jalapenos in a jar from H.E.B.

OHHHHHH, so many ways to enjoy the brisket!! Let's see, straight sliced with grilled veggies, shredded & piled high on a sammich, sliced on a sammich/po-boy, shredded & cooked in your beans & rice, Jambalayas, Gumbos,(La. thing), On a quesadilla like you had shown in your pic. That's just to name a few. I am sure that ya"ll have boo-coo ideas. So let's hear them.

Cut up some and toss it on top of some salad greens or shredded cabbage with a vinaigrette and some blue cheese crumbles (preferably stilton that I've crumbled myself).
Brisket nachos also kick some serious butt.

If I smoke some cabbage, then I like to wrap it around a bit of brisket with some Stubbs or Rudy's. Otherwise, I like it either on a Kaiser roll or some Texas toast.
It's good in the hashbrowns in the morning too

I have never had brisket. and have never smoked one. That is about to change. I just got a lot of ideas on how to eat the left overs:D
I was wondering if anyone had tried to make Pillly Cheese Steak sandwiches with briskett. Seems if it was sliced thin or shaved, it would make a good one.

I eat brisket usually 2 or 3 times a day
Most often I put slices on a corn tortilla, put just a little sauce (currently Cattlemans) along the meat, top with a #2 thick slice of pepperjack cheese covering it, nuke and roll .... man that is some kinda sho nuff GOOD diet food !
