My neighbor is having a surprise party for his wife today at 2:30. I put 16 lbs of spares (5 racks) on this morning at 6:30am. I put a 12 lb brisket on last night at 11 pm. I put them on my new smokintex' because I didnt want to stay up all night tending to my pit. Both were seasoned with Adam's rub for pork and beef respectively, he wouldn't use Texas BBQ rub. We are now 10 hours in on the brisket internal temp of 165. I foiled and put on my real pit. When I was checking the brisket I noticed the ribs look gray in color and don't smell like the ones with texas BBQ rub. I took them off of the smokin tex and put on my real pit as well. My question is this, what can I use on these ribs to make them look like ribs and taste worth a dam? I need to do something fast, they should be done in a few hours.
