View Full Version : What's Your Favorite Pulled Pork Sauce?

I've been trying to find a sauce for pulled pork that I like. I've tried some of the recipes from here on the forum and some of the commercial brands. Most were either too sweet or too vinegary. Tomato base sauce masks the pork flavor so much that you can't tell it from chopped beef. I know the right one is out there, I just ain't found it yet. What is your favorite pulled pork sauce? Is there a difference between finishing sauce and pulled pork sauce? Any suggestions?

I make my own... a mustard base with brown sugar, tomato paste, apple cider vinegar, worcestershire sauce, spices.

I think you'll need to experiment in the kitchen with a few batches to find what yer lookin for! :D I make my own too very simular to what Txngent uses in his. :wink:

Yea, I think you are right. Pulled pork is a relatively new thing to me. If ya can, give me some measurements of the ingredients ya'll use so I can start experimenting.

I make my own with Ro*Tel and TPJ Peach Habanero.

I almost never use a sauce on pulled pork that I make at home. In a restaurant, if I think the pork needs something, I prefer a vinegar and red pepper sauce. Try the vinegar sauces on pinto beans. Good eatin'.

Finally, I've had a few mustard sauces that I like if the pork is dry.

Here's the one i use it is sweet and vinegary but you can tweak it i don't have exact amounts.

apple cider vinegar
catsup
brown sugar
maple syrup
rib rub (mine) you could use tx bbq rub of course
plumb jam and fresh cracked pepper

combine all in a sauce pan and reduce by about a third.
My wife won't eat my pulled pork or any other with out it.

This one is pretty good on Pulled Pork...

Fat Johnny's *******ized Piedmont Sauce

1 quart cider vinegar
12 oz Sweet Baby Ray's BBQ Sauce
1/3 cup packed brown sugar
1 T red pepper flakes
2 T salt
1 tsp black pepper
1 tsp celery seed
2 T Worchestershire sauce
Juice of one lemon
1 T chipotle powder
1 tsp dry mustard
1 T onion powder

Bring to the boil, then simmer for 10-15 minutes. Let cool, and bottle. Great with Carolina style pulled pork BBQ sands.

Thank's JamesB, I will give that one a try. PK, is that one jar TPJ to one can Ro-Tel? Do you put it in a food processor? Also, Bigwheel recommended a store bought sauce a while back. Below is their web site.

1 can Ro*Tel
1 jar TPJ
1 cup brown sugar
1 cup wooster
1 tsp salt
1 tsp black pepper
3 tbs minced garlic
1/2 of a white onion

let it simmer in the double-boiler for about an hour, then blend it in the mixer until smooth. Return to the double-boiler for another hour.

I love the vinegar based sauces on pulled pork. But one thing that I have been absolutely a fan of is that the sauce has to be very warm. And I mean in temperature, not spiciness. There's just something about it that makes it a real experience rather than a coating on the pork.

I like more vinegar sauces, as well. My favorite is just some Tabasco or vinegar & peppers.

Thank's guys, the next time I do pulled pork, I'm going to make several different recipes and try them all. I have also read about a finisning sauce. What is that all about? PK, what size jar, and what flavor TPJ?

North Carolina pulled pork, vinegar based barbecue sauce recipe
1 Cup white vinegar
1 Cup cider vinegar
1/2 Cup packed brown sugar
1 Teaspoon cayenne pepper
1 Tablespoon red pepper flakes
1 Teaspoons salt
1 Teaspoon black pepper

Mix together and let stand overnight. You can also put split fresh chilies in this recipe for really spicy sauce and you can add more sugar if you prefer it sweeter.

North Carolina pulled pork barbecue sauce recipe
1 Cup ketchup
1 Cup chicken stock
1⁄4 Cup apple cider vinegar
1 Onion, chopped
3 Cloves crushed and minced garlic
2 Tablespoons brown sugar
2 Tablespoons molasses
2 Tablespoon dry ground mustard

1 Teaspoon cayenne or one fresh cayenne chili cut into ringlets with seeds
Mix together in a sauce pan and heat to simmer. Simmer 20 minutes and let cool.

I use the 6.5 oz jar. Peach Habanero makes a good BBQ sauce.
