Nice looking ribs there Herbie. What kind of wood is available there in Australia to smoke with?

Australia has an abundance of hardwoods but unfortunately the majority don’t give off any flavour for smoking. I generally start my fire with Oz hardwoods and buy imported woodchips (Hickory, Beechwood, Apple etc) for the flavour. This can get a bit expensive. I’m envious of you guy’s having so many different types of wood and the availability??

Good lookin' grub there Herbie. It's nice to hear from someone down under. Speaking of down under you cannot believe what a tough time I am having typing this because I have a ****atiel on the keyboard helping me.
Sounds like you need to plant some good "smokewood" trees.
