Anyone ever heard of blackjack wood? I bought a 1/4 cord of wood (oak) two weeks ago and cooked 6 briskets that were excellent and then this past weekend I cooked one brisket and 3 chickens on friday that turned out great also. However, the competition meat I cooked on saturday was horrible. All the meat was cooked with the same wood that was cut in late January, and bought from the same guy I've been buying wood from for years. A buddy told me that maybe I got a peice of "blackjack". I've never heard of the stuff but he says it looks like oak but it gives a kinda bitter flavor to the meat. Has anyone else seen or heard of this?

Hey Jay, I have several Blackjack trees on my place in central Texas. They are in the Oak family but ain't worth a flip for cooking with. I have seasoned it real good and could never get it to burn right. Just kind of glows red hot. I had a couple of brush piles of Blackjack that I thought I would never get rid of. Even tried to use it in the fireplace with no success. BTW, where was the cook-off that you just cooked at?

I had some Black Jack Oak once upon a time. Noticed it had a real dark outter bark and put out some real black smoke. Sorta skerred me but didnt really smell that bad. I just threw in a Black Jack log occasionally with the rest of the Oak until I burned it up. Didnt seem to cause any problemos but dont think I would want to use it alone.

We got Black Jack Oaks here in Georgia. Ain't worth much for noth'n. We have burned them in a fireplace and they stunk pretty bad.

Used to make single trees out of it when I lived in Tennessee. But, I guess there isn't much call for those thngs nowadays.

Luke, Thanks for the info. I have never heard of the stuff but I think some of it got mixed in with the other oak. That stuff makes the meat taste like crap.
The last cook-off I did was last weekend at Billy Griffin's place in pearland. It is a fundraiser for the Brazoria County EMS and Sheriffs Dept. When is the cook at the K of C Hall?
