View Full Version : How long can Cooked Pork keep

Weekend smoker here, I have to smoke a pork shoulder for a family function for Saturday afternoon. If I cook it on the previous Saturday how should I store it? In the refrigerator? Should I freeze? Should I pull the pork or leave it and pull after reheating?

The recent food handlers class I just attended taught that for cooked meat that it had a shelf life of ten days. Provided your refrigerator was set at 40 degrees or less. I have my ref set at 38 and I have had no problem keeping meat that long. I store it in a vacum bag or air tight containers until I reuse it. I prefer to pull when it is hot. I find it easier to pull. It is also easier to reheat when it has been pulled. I would rather do butts that shoulder. I get better results and less waist. . Just my 2 cents.

Pulled pork is different that brisket, in that I go ahead and pull it before packaging. Package it with a Foodsaver. Those things are the best.
You certainly can keep it in a refrigerator for just a week, or you can freeze it. It's a matter of what makes you comfortable and where you have the room. With a Foodsaver, you won't affect the quality of the reheated product, either way. Simmer to reheat, either way. The amount of time it takes to reheat depends upon how much you put in the bag, but a pound or so usually takes about a half hour.

Its good until it is all eaten or turns green and smells bad, whichever comes first!!!!!
