Has anyone ever used Texas BBQ rub to make beef jerkey ??

Lots of folks smoke their jerky at to high a heat.

IMO jerky is better either cold smoked around 100 F or air-dried.

AB did jerky on cellulose furnace filters with a box fan; I've yet to try this method but it looks like a good way to do it.

Chill your meat till it firms up, making slicing it evenly much simpler, slice the meat between 1/4 and 3/8" thick, put into a Ziploc bag with the marinade of your choice, (Texas BBQ Rub and some liquid, I would think just water, but that's a guess), refrigerate over night, drain well on paper towels, then layout on the cellulose filters so no meat touches other meat.

Fill 3 or 4 filters stack the on top of each other, then cap with an extra filter, use bungee cords to strap the stack of filters to the front of the box fan, stand the fan up and turn it on, it takes 6 –8 hours to dry to the right consistency.

I would certainly cure the meat if I were going to air dry it actually I'd cure it either way. Also I wouldn't add any oil or fat of any kind since fat rancidity is a problem with jerky.

Yes they do have their own and i looked into ordering some within the last month or so but they were out of stock at the time, I think...

We discontinued the Yellow Rose Jerky because it was taking too much away from the rub aspect of the business.

Don Marco, Here's the post that shows the link for both the pix and the recipe that I used from Tar River Rat. When we went down south to visit him, he gave me some of his jerky, we liked it a lot, and I have been trying to duplicate it ever since. Next time maybe I'll get closer to making the real deal...
