This is a Texas Wild rubbed tri-tip. 4 hours at about 220/230 on a small BBChef offset. Really tender and juicy with a nice "zip" from the Wild. Pulled it at 160 and let it rest for about 15 minutes.

Absolutely looks killer. I've yet to try my rubs. I'd like to try it myself first before I go serving to everyone. Once again though, that looks great! Great ring and not overdone

Saw one today at the local supermarket for the first time. EXPENSIVE!!!!
It was alittle under three pounds----- 28 bucks and some change :shock: :shock:. Picked up some nice meaty beef ribs for .99 a pound and scampered out of there.

You only get 2 per animal and they weigh 2-3 lbs each, so serving lots of folks takes lots of tri-tips, but the good news is they cook quick and taste great.

I slow-cook a few tri-tips when I go camping. Rub 'em down with a mix of kosher salt, fresh ground black pepper,garlic powder, a good dash of cayenne pepper and onion powder. Place them on a grill slightly away from the campfire (I will usually use a foil tent), baste with a 50-50 mix of red wine vinegar and garlic-infused oil every 15 minutes. It takes about an hour and a half to two hours. My skeptical relatives now insist I cook those things at every campout!:grouphug:
