My pit will hold about 9 gal. of water, do you guys always use water when your cooking? I was told never to cook without is that right?

I can only speak for myself, in that I don't use water. But I've seen some pits that use a water pan. What type of smoker do you have?

Are you speaking of adding water into the horizontal chasmber of your pit?
I know there are folks that do... Personally, I do not use water in my pit. Food always comes off moist.
The way I feel is... Water + steel = rust, and I don't like rust on my pit.
Just my humble opinion.

When I bought the pit they said to always use water and reading some of these threads (trying to get a BBQ education) Igot the idea nobdy really does. And yes thats the horizontal chamber.

Yeppers..use the water. Think the pit was most likely built to use it. Might warp it or something if you skip the water. Got a pal who has one that holds 15 gals in a SS trough type gizmo which sets directly below the meat. All the crud goes into the water...to clean it up you pull the plug. Gives it purt near same temps end to end. One of the few folks I know who can come up with an edible nekked brisket cooked alone on a big offset pit. He also very dangerous in ribs. Hard to talk any sense into him on the chicken.

On my Brinkmann Horizontal, I don't but,When I used to cook on a R2D2, I always used water on the water pan. Either way they worked for me. I just base it on what type of smoker that I am using @ that time.

I used to put a water pan in my pit when I was cookin' with my Hondo, but when I got my Lyfe Tyme I quit and haven't noticed a difference between the meat.
