Friend just got back from Col. and killed a large 6 X 6 elk and I told him I would smoke some for him. Any help or ideas would be appreciated.

Rub down using the simple 1-2-3 method with Texas Wild. That is what it was originally developed for for use on wild game. It is that easy.

Bill does that go for any cut of meat and refresh me on the 123 method.

Yeah it works on any cut of meat. First you should use Texas BBQ Rub to ensure that this works correctly as that is the way it was designed. Other rubs just don't work with this method. First, rub down the piece of meat you are cooking with some sticking liquid (worchestershire, coke, beer, etc) that will hold the rub in place. Rub Texas BBQ Rub over the sticking liquid and it will actually turn to a pasty substance. For the elk since it contains little fat cook it low and slow. I would cook at 200 degrees.

Well the smoked Elk was a success. If I can get these pictures to load I will give you an idea how it turned out. I don't know what cuts of meat they were. The meat hand been boned out and left it big chunks. Cooked to about 145 covered and added some apple juice cooked until 180 internal. Meat was firm but tender. The friends I fixed it for loved it and the wife who said she wouldn't eat any ate a great big helping. Hard to cook meat when you don't know what cut it is from.Rubbed with worch. and used the same rub I used on pork. Bill thanks for the help.

looks great! I cook venison hind quarters a lot and usually take them to 145-150 then let them rest for awhile, then slice and eat. Always a crowd favorite even for those who don't eat "bambi".

155 is probably where I should have been but having never done any wild game before I just wasn't sure. Wanted to make sure it was done. It tasted great.
