This weekend I will be cooking 2 brisket and 2 butts. I don't know if I can squeeze any in, but pork spares are 1.49lb this week. Pretty good for this area. The meats are being split between 2 family gatherings. Anyway I have a tree full of winesap apples. How many can I cook up with these meats? I have some smoked jalepenoes to add in. Ideas?

You might try coring them out, insert a halloween size Snikers bar or other of your choice, wrap in foil and put into smoker. Cook until the apple is tender. You could also peel the apple and sprinkle with cinnamon and sugar! Let us know.

now the snickers bar thing is an idea. I wonder if a couple of apples in the water pan would be a good or bad idea.

Be a waste of a good apple. Don't think it wood add any noticable flaver. Jus my rusty penny's werth.:rolleyes:

I don't want to waste them but I have more than I can use. The freezer is still full or the Mcintosh from last month. I think we made 7 pies and dozens of apple crisp plus we have a few large freezer bags full of ready to cook apples. Wonder if I could use some in the BBQ sauce and leave out some juice.

Not a bad idea but ya wanna take the stems off so when yer bobbin' for them it ain't that easy........:D

The snickers bar thing is the way to go i also placed rolos in some of em and sealed it with brown sugar and wrapped in foil leaving an opening in the top so they get some smoke.

If you don't feel the need to cook them in the pit you could always fry them.

Peel them, core them, and slice 'em up.
Melt some butter(ok--margarine will work too) 'bout a stick or so, in a non stick pan.
Put the slices in and toss 'em around to coat them with the butter.
Add a pinch or 2 of salt.
Cook 'em slowly for a good while, stirring occasionally, 'til they start cooking down.
Add cinnamon and brown sugar to taste.
You can add other spices. A little nutmeg's nice. Also you can add some molasses or maple syrup for more flavor layers. You can also use red hots instead of cinnamon. That'll add some color too.
Keep cookin' 'til they look like you want. I usually wind up with part of it about the consistency of thick applesauce with some whole slices left.

I don't think I've ever heard of winesaps. Anyone know how many varieties of apples there are?
I s'pose these idears would work out if one can't find these winesap apples am I right?

Hey Jfish, :idea: If you like brewing your own Ice tea, you could cut up the opples up real small & let them brew in your tea & them let them star in your tea pitcher & steep before you ad your water & sugar. I do that with Mango all of the time & it wouks like a champ. Either fruit would work.
