Smoked a couple of pork tenderloins. Stuffed with mushrooms,onion,yellow and red bell peppers

One had Hoochie Mamma rub the other Hog Waller rub. Both were pretty tasty!

looks very good, but I've got a question , do you saute or pre-cook the veggies before they go in, or do they go in and cook along with the meat ?

Any veggies I put in are raw. I did a pork loin the other day with roasted red peppers, prosciutto, and garlic roasted havarti cheese. No Pix cuz I had no camera with me, but it turned out GREAT.
