got some st louis ribs any idea how to make them tender w/o foil please give me any all tips how to cook ribs

220-250 for about 6-7 hours until the bone is loose!

I find that baby backs and spares are the two ends of cooking times for pork ribs, and St Louis cut spares fall above the half way mark but not as long as spares.

Some where in the 5 1/2 - 6 1/2 hours for them when I cook them, I tend to cook them only for show and go, and I cook them early and hold them in a cooler till I'm ready to serve, so there is some carry over cooking going on the the cooler, thinking that through I'd say Woodman is about right, though if you are cooking 250 at the grate 5 1/2 is still very possible.

Welcome greenjk glad you could join us tell us more. What are you cooking on? What will you use for heat? These things will make a difference but done right the end results can be spectacular. Where are you located and what has been your past experience with ribs if any?

5-6 hours with Tx bbq rub original, un-foiled at 210-215....ah I can smell them now....:D :D

I started out using 3-2-1 and foil, but I have gotten away from the foil. If you follow Woodman's temp guide AND, big AND, if you keep a very clean burning fire, the spare ribs will be fantastic.

I brush a little oil on them to use as a binder for the rub. This will help keep them moist until the fat in the ribs starts to render out. Keep the temp below 250. If it gets too hot, the meat will dry out fast; 215-225 is best.
Spray with apple juice or a liquid of your choice every 30-45 minutes. Some folks will add a little bourbon. I just open the pit a couple of inches and spray inside to prevent losing too much heat. Good luck and keep at it if they're not perfect the first time.
