...that Bill Cannon is a magician and Texas Wild is an honest to goodness magic dust. Today I cut an 8 lb pork loin in half, butterflied each half and put a half pound of my homemade sausage in each one. On one I sprinkled coarse salt and pepper on the inside and outside. On the other I sprinkled the aforementioned magic powder on the inside and coated the outside with the Wooster/Texas Wild combo. Smoked them side by side with some well seasoned apple wood in my CG until they were at about 125, foiled them and pulled them at 160.The difference between the two peices was remarkable. The one that was enchanted with the magic dust was juicier, had a more pronounced smoke ring and an all around better flavor. It was hard to believe they were the same cut of meat.

Not too much makes me say "Well I'll be damned", but this side by side comparison did. I've been a huge fan of Texas Wild since it came out but now I'm a little scared of the stuff.

I agree, HT! When Bill introduced Wild at last year's Qfestus, we all agreed it was some pretty awesome rub. Over the course of this past year I have come to enjoy it as my favorite of the three blends Bill makes. I do of course still use the other blends from time to time, but the Wild is my prefered choice. And yes it is truly a magic dust! Thanks Bill! :wink:

I agree that the "Wild" is an awsome tasting rub that really enhances the flavor of your Q. Great stuff Bill.
