Okay, so I know that homecooked is better but when I am out, I really like the chicken that Dave's can produce. Their ribs are okay and I really like their sauces. What is the secret to their chicken? How can I cook that at home? Do they smoke them or just broil them?

I like thier sauces. Last time I had the ribs at the Woodbridge Va store, they were way over-smoked. I have tried brisket there a couple of times, and was disappointed every time. I have never tried the chicken, but I think my fiance had it and really enjoyed it on at least one visit.
I want to learn to do chicken and pork butts/picnics here at home, I am yet to try either.

The chicken is the only thing I DONT like there!
Their sauces are good though...

Now I have only been there for lunch and always had the brisket sandwich. My waitress "famous Sarah" tells me that they don't smoke anything there. They just heat up the bags of food I'm told. Haven't been back since for some reason.
Maybe I need to go back for the chicken.
I knew a Guy that worked at a Famous Daves up here.
He said that they had electric smokers and they smoked the ribs there.
He said the briskets came pre cooked. They just threw them in the smoker to give them the flavor. Thats kinda lame.

Over all I think their food is okay, we don't have much to compare to her in South Dakota. But what about the chicken? I would love to be able to make it like that. My chicken has been hit and miss, last time it was really dry. I took it to 168 in the breast.

I tried FDs in MN because my son raved about it. Had the brisket and it tasted OK but was not a fresh off the smoker brisket. They claimed Texas Style but the brisket came wet, which Texas did Dave visit? Sauces were a good variety. All in all there is a good reason there is no FD presence in Texas. Don't get me wrong in MN it is justifiably considered good.

I have never had "Dave's" chicken, so all I can do is give an example of how I do it. Sometimes I butterfly the bird and other times, I stick a beer in its rear. No matter which way I choose to cook it, I always start with a proven rub. Apply the rub to the skin of the bird and sprinkle some under the skin as well (especially on the breast). Bag your bird in a Ziploc style bag for an hour or so. After an hour has passed. Pour enough Italian Dressing to evenly coat the chicken and let it set overnight. The Italian Dressing can be used as a starting point for your marinade. Try to "dress" it up to your liking with onions, garlic, herbs, citrus or better yet, BEER. Put your bird in the fridge until the next day. How ever you decided to cook the chicken is up to you. In a smoker, 225 for about 3 hours or over a medium heat on a charcoal grille until you reach the 165-168 temp range. I usually make another small batch of marinade to baste the bird hourly.

Well I was messing around on the internet today and found a recipe for Famous Daves BBQ sauce. Don't faint when you see it. :shock: I will post it in the recipe section.

FD's were my standard for my 1st couple racks of ribs.
By far the best ribs i've had in Michigan (Texas too, come to think of it)
besides my own now.
FD's brisket is not very good, (stuff I had in TX was killer:D )
I have to admit, their chicken is good..
My "famous" waitress claimed FD's smokes everything.. butts go for 18-20 hrs.. or so I've been told...
My better half loves the "sweet and sassy" sauce..
Here in MI, unless you smoke at home, FD's is about as good as it's going to get...

I ain't a real hockey fan but I hear the Blue jackets are doing well.
Going to watch all the new Cavs play at the Q tonight which should be interesting.

The Pistons & the Red Wings I believe are at the top of their divisions right now. But some how we seem to choke in the playoff run. Just like your football team (OS) :banghead: :wink:

Texas RoadHouse... hmm. ain't never heard they did Q....
Their is a "Texas smoke" by my house... bad ribs.. avg steaks..

Went to the Texas RoadHouse last night...
Steak was way above avg for MI..
Ribs, dave's are still better (these were over cooked, and we were there at 6:00pm:? )

Doing some wings tonight.
Using my famous (with family and friends) wing sauce that's just hot enough.

I never did post it here yet.
Thought about doing it but it's not really something I measure out ya know.
It is similar to the Buffalo wing sauce recipe that's posted in here but I use Franks and some of the flavored Tabasco sauces.
While I was making it up last night,I did think to myself...that's about 2tbs of werster sauce...about a tsp of chipolte tabasco...because I do intend on posting it some day. Maybe after hockey season :twisted:
