The weather on Texas Gulf Coast was perfect for BBQing this afternoon. I smoked a pork picnic and a pair of beer butt chickens for a few friends. Both turned out awesome. A few tortillas were rolled out and flipped on a comal in the firebox. Six different hot sauces and the ice cold Sam Adams Light were great, but the highlight of our day was spending an hour watching JB's videos on YouTube.

Thank you all for the kind words. We had a great time cooking Sunday. For all those mentioned that live in the area, I would really like to meet many of you and learn a few tricks to improve my cooking. I am learning as I go. I try to do things a little different everytime. The next time I fire up the smoker, I will send out a few invites. I usually cook too much anyways.

Jason, just a heads up...
several of us will be cooking at Scooters Ice house in Pearland on April 18th, please drop by if you get a chance, that goes for all other forum members that might be in the area...

Keep up the good looking bbq, think you might just be joshing us about that
newbie stuff..:D the grub looked good!!

yep. they have two a year - one in april, one in october. brisket and beans. it's either 30 or 35 teams, i forget. there's usually a waiting list to cook it, so if you're interested, run by there and get your name on the list.

That's the same weekend as the South Belt Cook-Off at Tom Bass Park. I should have done what Gordo did and dropped out of SB and cooked Scooters. It's amazing how SB can get 90 teams with no pay out and a $200.00 entry fee.

they limit it to 35 teams...only $50.00 to enter brisket, $10 to enter beans...
pays out 6 places...

1st brisket..$600.00 ...down to 6th...you win your $50 bucks back...
not sure if theres a payout on beans but trophy's are given..

Its a fun type cook...but don't let the cheap entry's fool you...
There are some high powered teams there...:shock:

If any of you guys need an extra set of hands on your team. I would really enjoy learning the "in and outs" of comp cooking. I am licensed with the great State of Texas as a Food Safety Sanatarion and grew up in a family owned restaurant. To put it more bluntly, I WANT TO LEARN BBQ!
