been reading and learning how to smoke ribs over the last year
from this site. i used to grab some baby backs and throw them
over the charcoal and cook'em for 45 minutes, LOL! now it's 4
or 5+ hrs in the smoker and the gang loves them. thanks to all
here who have put up some excellent tips and secrets. 1 question
i have to start is...i like cooking spare ribs. i trim them a little bit
myself, not too difficult. what is "YOUR" minimum & maximum weight
on spares? i've had them as much as 4.5+ lbs. and they took forever.
do you have a fixed weight you like for consistency?

I usualee get 3 ½ down spares.

Welcome and glad you finally joined in the crowd.

Buckeye don't know where you are finding those 3 1/2 and downs on the spares cause they can get up to around 4 pounds. It really does not matter as they just take a little longer to cook.

Welcome. Dem 4 pound spares are called "small" now. 3.5 and down are called "light" and ya pay extra for them. Dem 5 and ups are just to darn big even though Gator likes to cook dem. Hogs are growed so big now, more $$$ at market. Kinda like chicken dat go from bittys to 5 pounds in 7 weeks.

Got dis info from a rib distributer kinda guy when I was ordering some spares ya know.

4.2's are my favorite.

Welcome Desi. It doesn't really matter to me what size the ribs are. I kinda go by who I'm cooking for or what I'm cooking on. For a big hungry crowd, I'll go 5 and up, easy. Just for me, I like them in the 4 # range. If I'm cooking on my Weber, I just want them to fit in there without trimming.

I get 4 - 4.5 lbs farmer johns here. They do alright. At the moment it's either that or wally world's ribs, but i refuse to get enhanced pig. Who wants ribs tasting like ham?
Good news is that word around the campfire is that Costco will be breaking ground on the mountain this year.
