So we decided to invite the family over for Easter, usually mu aunt has the big meal out at the lake, but we did a big crawfish boil out there last weekend. We decided to give her a break this year and offer up our house for everyone to hang out at. Needless to say we have been cleaning up all day and getting prepped for the cook.
Here is what we have accomplished so far......

Very nice so far...If I was thinking ahead :rolleyes: I would have made some Armadillo Eggs instead of Easter Eggs.

OK, got up at 330a and fired up the pit, got it warmed up and had the briskets on at 5a, put the ribs on at 9a, chicken will go on around 12n and Armadillo Eggs & ABT's at round 1230-1p.

Looks Good! I smoked a couple briskets, a tenderloin and few dozen chicken breast yesterday so just warm up and eat today.

Interesting stuff today, everything was done at 3p EXCEPT the brisket. Seems like I misjudged the time it would take, the 3 hour plateau didn't help either. I did something today that I didn't think I would ever do, finished the brisket in the oven..... So as of now, no pics of the brisket yet, sorry! But here are a couple of the other goods.

I will add the brisket in a bit.
One thing that was strange was my spares came out VERY tough. I did them the same way as I always do, but had a very different result. I can't figure out what happened, maybe it was the meat......maybe it was me.

It tasted pretty darn good.......#1 didn't slice to well, pretty much fell apart, #2 sliced up real nice. MMMmmmm mmmmm good........

ABTs or "atomic buffalo turds" are jalapenos that have been cored, stuffed with some cheese mixture (usually pan sausage, cream cheese, and whatever else you want), wrapped in bacon, and cooked on the pit until the pepper is soft and the bacon is done. Armadillo eggs are, usually, a cheese stuffed jalapeno with pan sausage packed around it, and the whole thing is batter fried.
